00:00Ho, ho, ho! Merry Christmas! I'm here with Wiggles, and we're here to celebrate the holiday.
00:04Okay, so I want something fun and festive for Christmas.
00:07I'm going to get a little tipsy-turvy for the holiday before Santa gets here,
00:10so I'm going to make something that looks as good as it tastes.
00:12So I'm going to attempt to make a Santa Sour.
00:14So traditionally a sour is, you know, lime juice or lemon juice,
00:18some sweet simple syrup, and some booze.
00:20But I'm going to make it extra colorful and extra festive.
00:24We're going to create our own Santa Syrup, if you will.
00:27Now I've tasted Santa Syrup before, and it was right from the tap.
00:30Okay, how do you think I got this new hat?
00:32But, oh, that's probably Santa right now.
00:36He said, don't tell anyone about us.
00:38So, anywho.
00:40So we're going to start first, we're going to add our liquids to it.
00:43First we're going to add our pomegranate juice to the pot.
00:47Let's do the whole thing, we're not driving.
00:49Cranberry cherry juice.
00:51Okay.
00:53Then we're going to add our spices.
00:55Maybe a couple, maybe three cinnamon sticks.
00:58Like that.
01:00Two pinches of cloves.
01:02That gives it that really Christmassy flavor.
01:04Some star anise.
01:06Have you ever tried star anise or anise?
01:08I knew a girl named Anise once.
01:10They look like this.
01:12And they smell like licorice.
01:14I think licorice is Christmassy.
01:16But these just give a Christmassy flavor to it as well.
01:18So I'm going to add like three or four of those in there.
01:20I'm going to add a little bit of orange flavoring or orange extract.
01:24If you don't have this, it's fine. You can use the orange peel.
01:26But I like this because it just gives a little Christmassy flavor to it.
01:29A couple bay leaves. I don't know because I have them.
01:31But you can also use rosemary, which I have.
01:33I'll throw one of those in too.
01:35Anything wintry that you have.
01:37You're basically drinking a simmer pot.
01:39You're making a kiki simmer pot that you're going to drink.
01:41And then last but certainly not least, the sugar.
01:43You want to do equal parts of how much liquid you have.
01:45About the same amount as you have in the sugar.
01:51I'm going to do a couple peels of orange.
01:55Okay, and we're going to get it on the stove.
01:57And just simmer it on low until all the sugar is absorbed.
02:00And it's reduced by maybe a third.
02:03You don't want to reduce it too much.
02:05You want it to still be pretty liquidy.
02:07And then just reduce that and let it cool overnight in the fridge.
02:09And then you have a kiki secret Santa syrup.
02:11Okay, it's time to make our Santa Sour.
02:13All you're going to need is your spirit of choice.
02:15I'm using vodka today.
02:17We need our Santa Simple syrup.
02:20We're going to use fresh squeezed.
02:22Here's the kiki ingredient. This is aquafaba.
02:24If you don't know what that is, it's basically just the juice from a chickpea can.
02:27That's going to create the froth and foam.
02:29Traditionally a sour uses egg whites, but I just think that's nasty.
02:31I don't want to be drinking no liquid chickens.
02:33Anyway, so this is a perfect alternative.
02:35And you don't even taste it.
02:37If it thinks it's going to put any water in there, it's going to be gross.
02:39You don't even taste it, but it creates that froth we need for our signature red, white, and green cocktail.
02:43And then we just need our glasses.
02:45And some rosemary for garnish.
02:47To my shaker, I'm going to add lots of ice.
02:51Vodka or gin or tequila.
02:53Whatever you like.
02:55But clear spirit, I would say.
02:57First.
02:59Then we're going to add our lemon juice.

03:03You know, I don't measure.
03:05Just to your heart's content.
03:07Magic ingredient.
03:09Oh no, this is not a magic ingredient.
03:11This is our secret Santa ingredient.
03:13This is our Christmas cooler.
03:16And then, aquafaba.
03:18This is going to create that nice frothy foam.
03:20That's it.
03:22Now we're just going to shake, shake, shake it.
03:24Okay.
03:26Here we go. This one's for Santa.
03:28And it's important with this drink, because you want a lot of froth.
03:30So, the more you shake, the bigger the froth you're going to get.
03:32And then the more Christmassy it's going to look.
03:36So, you know.
03:38Keep going.
03:42Alright, I think it's nice and frothy.
03:44Crack it open.
03:46They make it look so easy.
03:52She's red.
03:54This is going to be messy. Let's pour.
03:56Look at that color!
03:58So now, as it settles,
04:00you're going to get some separation.
04:02That's the aquafaba going to work.
04:04You're going to get the frothy top.
04:06And our bright red bottom.
04:08How pretty is this already?
04:10And now we're going to garnish
04:13with just a rosemary stem here.
04:15Just like that. It looks like a Christmas tree.
04:17How cute is this?
04:19And this has everything you want in a Christmas cocktail.
04:21It's festive and colorful.
04:23It looks right on brand.
04:25Very Christmassy.
04:27We've got the Christmas tree on top.
04:29Red and white for Santa's hat.
04:31And it's infused with those flavors that you have in the wintertime.
04:33The clove, the cinnamon, the star anise.
04:35These look so cute and so festive.
