01:08both outstanding chefs restaurateurs in the area and we collab them and casey this is just stop
01:16number one on your uh culinary excursion this week this sucks because i totally gorged myself last night

01:28you've been doing great with losing weight and watching what you're eating all right for the next
01:31three days it's all about your taste buds because what do you get for the guy who already gives the
01:37greatest birthday gifts and most thoughtful birthday gifts to anyone i've ever met and we know that he
01:43loves food so that's what he's getting this and you've been good you've been working out you've been
01:48doing all your stuff you're allowed to to kind of let loose a little bit around your birthday casey
01:53marissa had this wonderful idea uh about giving you the things and you go on about these various
01:58places and we're going to talk to a number of the these people are really shaking up the food scene
02:02here in philadelphia by the way casey this is really all marissa's doing we are packaging this
02:08as from the show but she it was her idea she did all the work okay and uh but it's from all of us

02:32i posted on social media yesterday uh about this ravioli that i had uh last night so yes uh and it was
02:38the best ravioli that i have ever eaten it's not a lie i'm not just saying it because it's my friend
02:42my friend jason oakday he is the one who told me about foxy lady chef we were uh so jason uh jason's
02:49son julian and my son seamus went to school together uh and we were on a field trip at hershey park and
02:55we were just waiting for the kids to come off of a ride and we were just talking about food he was
02:59talking about his venture into i guess it's like small batch culinary expertise or whatever so he does
03:06pastas right and he was telling me about foxy lady chef and that you used to um you don't do this
03:12anymore but you used to work out of underground arts or something right so during the pandemic
03:15yeah when uh like i was full-time at underground arts just doing these tacos and cocktails to go
03:22and it picked up a lot of traction and people started talking about it i heard about it yeah
03:27so the beginning of the pandemic you know everyone was kind of freaking out like what do we do and all
03:31of my catering business had just been you know completely gone because no one's doing anything
03:37at events or anything so you had to pivot right yeah this huge music venue and to go drinks became
03:43the thing and so i was like you know what no one's doing this taco here in philly so you know and i
03:48need a reason to have people come to 12th and keller hill because there's nothing out there so i decided
03:54to do this taco and we kept it going and it just went insane and so yeah so here i am now i got you
04:00know you guys heard about me so yes no it's awesome and congratulations on that thank you thank you so much and then we
04:06also want to welcome to the mic the pizza joe thank you so much i appreciate that david you're in uh
04:14manny young yes sir all right and what uh tell us a little bit about your your shop and people maybe
04:19who haven't been there sure um so we kind of we actually opened up in the middle of the pandemic
04:23which was a little little crazy it was uh wasn't planned we were we were a catering company on the
04:29side i owned a crossfit gym as well so that got shut down oh we had nothing to do so but we
04:36had we were booked out on the weekends for catering like i think we were six months out canceled all
04:41those events we started having people call the house hey how much will it cost to come pick up
04:47pizza at your house so whether we sold pizza out of the house or not i don't i don't remember
04:52no no no you gave it away you gave it away you gave it away yeah yeah you would you do what you do
04:58it's right yes exactly exactly all right so well real quick so you owned a crossfit gym yes sir all
05:04right so you're gonna help me out today after uh during the commercial because here's the deal
05:08i've been doing these challenges every month so in january i did a plank challenge um then in february
05:14i did a push-up and sit-ups and so tomorrow is july 1st and i'm doing a burpees challenge
05:20my favorite movement okay uh i've never done a burpee before in my life so maybe today we can
05:26do a burpee 100 yeah proper form proper form and all that stuff okay a lot of people don't do the
05:31full burpee they don't do that full jump at the end man you gotta don't get their chest all the way
05:35yeah you gotta do it the right way show them how to do it the real proper way to do it is with pizza
05:40in one hand exactly and as you go down in that position that that push-up position you get a bite
05:47and go back up i'm gonna earn every single calorie i eat today so pizza john though is is uh
05:52so right down there it's it's you have like people put their orders in there's it's like a thing and
05:57i'm like you know i said i don't know if i'd ever go through all that to get pizza and everyone i've
06:02talked to said it's worth it it's worth it it's worth it yeah hands down the best pizza when we
06:07when we opened we had a very small oven um so it was hard for us we couldn't keep up with the volume
06:11so that's why we started with the ordering system we have up got a new oven uh way more
06:16double the volume now so that's actually we still do the pre-order system but we also have
06:20walk-ups every day available wow i'm looking at the pictures on your instagram account my god does
06:25that stuff look good so i want to ask both you guys about uh the pandemic and and instagram because
06:30you know everybody went indoors for a year and and spent a lot more time on their phones but one of
06:34the things that i've noticed over the last year is that people are paying more attention to small
06:37businesses small restaurants local restaurants has it been one of these things where people discover
06:42pizza john where they discover foxy lady chef and then like oh my god i gotta get out and see that
06:46it's got to be a way to help with the business and advertise yourselves right yeah absolutely i mean
06:52for me i would say 200 percent um the reason why this taco so this taco is really big on the west coast
07:00and what is this taco by the way you need to tell us what it is so this is the birria taco um this is
07:06the queso birria which is basically a braised beef um fat is a very important part of the process of
07:14cooking it's cooked up like a quesadilla but then you dip it in a consomme which is the broth that
07:19it braised in oh um so it's crunchy it's soupy it's delicious in california this is insane like
07:26there are taco video media taco trucks on every corner and there's lines um so no one was doing
07:33this taco here so when it started happening instagram was the way that i could tell people that
07:39we have it here it becomes word of mouth advertising i mean you know people and listen i find out about
07:43you and and pizza john because of casey and casey found out about them because of instagram and like
07:48it's it's a way to spread word of mouth advertising that in a weird way the pandemic actually kind of
07:54helped a little bit absolutely yeah absolutely it's very important for businesses please use
07:57instagram yeah yeah yeah so important it's free it's free i mean that's the thing it's free yeah
08:02right so it's called a uh a queso birria queso birria okay so casey i have not touched anything this is
08:08the first thing i'm going to try and by the way they collabed on something too we're going to find out
08:12about that too so there's yeah dude we got the pizza john the foxy lady all of it in one thing so

08:54some other things that i thought would be uh you would appreciate i brought for your kids so you can
08:59keep them busy while you're eating some mac mart which is a macaroni and cheese spot uh it should be
09:05on your i put the menu there um i also brought you some cocktails to go from tattooed moms because
09:12you know you can spread that joy around they've been amazing they've been doing they've been
09:17amazing and you know they wanted to show you love here so there's a few bags there's like a
09:22piccletini a cotton candy martini piccletini oh my god is that is that a big thing now piccletinis
09:28i've never heard of a piccletini but i just love pickles and i love teenies too all right sounds
09:32like a circus act what's going on with this mac and cheese that i'm about to dive into so that is
09:37from mac mart okay that's supposed to be for your kids that's for your kids they're down the shore
09:41right now so that's the kids i don't think that's is that warm or is that no it's not warm but that
09:47is it's a mac and cheese only spot like they only do mac and cheese and it's amazing okay you know
09:54what yeah that's what i'm wondering what is this so i'm gonna hands down say this is the best chef
09:59in philadelphia besides david and myself um this filipino chef named daps um you can follow him on
10:05instagram he's all over my instagram but he makes these meal kits and you'll cry like they're so
10:11good so that's all filipino food that's um this is yeah pork belly do you know what's very cool is
10:16that pork belly yeah that's just that's all that is that's all pork are you supposed to eat it like
10:20in a big nugget you can dip it in the sauce i gave you with the garlic rice all right um there's other
10:25components that are out out on the table for that okay the sauce with the garlic rice where's that
10:30yeah the garlic right there there's gonna be like a little oh this little ram yeah look at all that
10:34yeah and then the gem of all of this is korshack bagels i let he gave me like a dozen bagels for
10:43everyone in the studio but those are the best bagels in philadelphia and did you say horshack
10:48bagels wow a welcome back cotter trivia i got a bagel mr cotter korshack bagels okay korshack
10:57bagels those are all things you probably miss because they sell out all the time and so here's the
11:02great thing so we have an everything bagel here but the most important part is it's on both sides
11:07right yeah they always screw that up they don't a lot of places just do it one side and it's not
11:12you're not doing it right gotta do it on both sides so i i gotta dig into this pizza i'm gonna go with
11:16the um all right well hang on dave what do we have uh so uh what casey has right now is our uh grandma
11:22style with pepperoni so with our grandma we do um a lot of people would think it's more like a
11:28traditional sicilian right um most sicilians are par baked so we don't par bake that we we do a
11:34three-day fermentation process i don't know what par bake is so they would have no toppings on it put
11:39it in the oven bake it like almost like bread all the way through and then put the toppings on top
11:44gotcha so we put it on the raw dough um i find it gives it we get a nice crust on the bottom we do a
11:50sesame seed bottom as well that's what's up that's good that's that's something again nobody's doing
11:55that's a good thing nobody's doing here in philly um something a place called freddie's up in queens
11:59used to do and then paula g's used to uh uh get a kind of version of that as well so listen um when
12:05you're when you're being creative in the kitchen it's it's got to be rewarding for you and i'm sure
12:09customers come to and they're like oh i'm gonna try this but also you probably have to go with the
12:13standards to appease the masses right so where's the balance for you when it comes to traditional
12:18pizzas versus the stuff that you want to try out so that's kind of where we came up with our round
12:21when i got started with pizza i really did more neapolitan style yeah the quick bake but a lot of
12:27people when we were getting more popular they weren't used to true neapolitan from naples like
12:32style pizza they're well why is it a little soggy i'm like well it's not soggy it's it was cooked in 90
12:37seconds so our our round we kind of developed we took a flour from italy um and then a high gluten bread
12:44flour from here in the states and we we combine them and what i call our round is like a neo
12:49hybrid so trying to meet the best of both worlds you're acquiring your so your ingredients as this
12:54probably holds true for both of you is that you you you're you're very specific about what you're
12:58what you're putting in i mean stop and think about the odds i mean listen nobody wanted what happened
13:03over the past year plus but the truth of the matter is that you guys have received hyper focus on what
13:07you're doing because of the uniqueness of it and uh in a way you know this is this portends good
13:13things for you also this is a food this is a food area everyone's everyone's into this stuff i mean
13:18we do the the uh the connoisseur segment you know like once or twice a week here because people just
13:23go nuts for this stuff yeah so i'm i just dug into the grandma piece of the grandma yeah absolutely
13:29uh now i'm gonna try the neapolitan style so is that okay first of all yep it's fantastic
13:35uh is that your classic detroit style pizza i haven't dug into the crust yet where uh
13:40so our like we do a detroit as well but the detroit will have that cheese edge crust so that's right in
13:47a much thicker pan um that one we just do in our uh regular 16 by 16 sicilian pan okay so you're
13:54saying now that the word is is that uh okay so if if someone is interested obviously foxy lady chef
13:59acquiring the uh as we're raving about the tacos best way to do that is how uh follow me on

14:54console and i love brownies have i eaten anything that's been infused yet everything in like 20
15:01minutes and it's just really interesting in like 20 minutes but no that's cool all right so then we
15:07want to any oh case did you try the other one i did okay i'm good and by the way the the sesame
15:11seed crust fantastic excellent it's um uh it's not overbearing it's just an added nice little
15:17dimension flavor i love it and peaches oh by the way you're right across from the place where i get my
15:21my phone's repaired the uh the mac right that's oh yeah maddie's a good buddy of mine yeah he's a
15:25great guy so uh uh during the commercial break i went out to go to the bathroom and there's a young
15:31lady here julie did you say okay i ran into her in the kitchen and i didn't recognize her i'm like oh
15:37you know what hey i don't recognize your face i thought maybe she worked in the yeah the company yeah
15:42is that why you chased me out marissa okay because they came up with this quick little cover story
15:47they were like oh you're here with the mgk right and i'm going to the bathroom i go
15:52the bell is on vacation right like they're doing something with mgk okay whatever you know and by
15:58the way we're not making fried bologna sandwiches today yeah well thanks leave that here we're

16:06get three days this is casey's birthday present three days of outstanding gourmet food some of the
16:13best in the city that you're gonna find which means of course some of the best in the country
16:16and i love that it's a celebration of of the you know the the uh the never say die attitude that
16:21you guys have displayed during all this and a celebration of the food and stuff as people are
16:26getting out and about and are excited about trying out these different things it's our pleasure to
16:30bring it you know to their attention all right and now anything else can we go to the collab or is

17:05just like you would the taco you dip it into the consomme oh my god we just over the weekend we
17:10just did the mani and you gotta do it all over this pizza for dipping yeah that's a great idea
