00:04I feel like Michelin's taken Glasgow quite seriously in the last few years,
00:09which has been reflected both in the stars and the Bib Gourmands.
00:12Yeah.
00:13That's your experience as well, right, in terms of being able to be Michelin recommended?
00:17Yeah, absolutely.
00:18I think it's so nice to see so many places coming and the guide as well,
00:22because you've got the stars, the Bib Gourmand,
00:24but the guide also goes for places that you know are kind of up and coming
00:28and gives that an extra platform and a bit more recognition.
00:31And Michelin, obviously, is so recognised all over the world.
00:34And for it to come to our humble little hometown of Glasgow, I just love it.
00:37It doesn't look very humble right now, to be honest.
00:39I know, it's very grand.
00:40We're in a spectacular surrounding.
00:42But it's great.
00:43And we've got Michelin Mantaire downstairs taking photos with everyone.
00:47And you're doing an event tomorrow where Michelin comes to the Barras,
00:51which will be fun.
00:52Isn't that a sentence you never thought you'd say?
00:54The executive chef of the Ritz will be there talking to you.
00:58What do you think that that kind of, you know,
01:00there'll be a lot of people there from Scottish food and drink kind of scenario.
01:04I know that there's a lot of challenges across the industry as a whole,
01:07but it's definitely a good time for Scotland food and drink
01:10in terms of having produce that's quality, right?
01:12Yeah, absolutely.
01:13And, I mean, we've got,
01:14the produce has always been absolutely amazing in Scotland,
01:17but we've also got the people.
01:19So speaking tomorrow to people like Lorna McNee as well,
01:22Jonathan McDonald from Skip Restaurant,
01:24we've got absolutely amazing chefs and people within the hospitality industry
01:28right within our city and within our country.
01:30And I think regionally we've got so many great places opening.
01:35It's not just the big cities, it's kind of like out of towns as well.
01:38So what a really good time for Michelin to come to Scotland
01:41and Glasgow for the very first time.
