00:00Yes, we came here in 1988 and really started from scratch here with the brewing and went
00:21on from there really. So a small kitchen in the bar with a handful of staff and gradually
00:27it's just got larger, moving the kitchen out to the back area and employing more staff
00:37and of course brewing our beers. So we moved the brewery up to five minutes away where
00:43we live and we brew six beers. We're proud of those. We've won a few awards for those.
00:50All the pictures on that wall up there for instance, that's what we did. We started
00:57to try and sell this as a proper pub. And what's more, we decided to start brewing
01:06our own beer, which we did, out the back there. That's what it became after the gentleman
01:13who owned the pub left. This is what we started to do, this sort of thing here, first in last
01:20out, on all these emblems of the beers. We've been serving food all the time. We used to
01:29have a small bar area up here where we serve food, a small kitchen, but we've moved the
01:34brewery where we live, just up the road. And now we have a full functioning kitchen with
01:40some lovely staff producing all homemade food. So we make everything ourselves. It's called
01:48the first in, last out, and the locals know it as the phylo, but yes, that's always been
01:57the first in, last out, and probably the first pub as you come into Hastings, and the last
02:02as you leave.
