00:00This is Seb's. It is a bar located beneath Margo on 68 Miller Street.
00:07So Seb stands for 68 Basement Bar.
00:10Really kind of trying to break the mould of what a basement bar would be.
00:14You've got a really good food offering where we are showcasing food over fire.
00:18We've got a dedicated cocktail kitchen as well which is show-piecing using unique equipment.
00:23We've got a centrifuge which quite frankly normally gets used for splitting blood in medical purposes.
00:30But we can use it for drinks purposes where we're changing what we can do within that
00:36and doing things like cocktails that are like say milk punches which typically take 10-12 hours to make.
00:41We can do them in 45 minutes because you've got the equipment to do that as well.
00:46It's been great. We've been open for 10 weeks now.
00:48It has opening just before Christmas which was great for us.
00:51It meant that effectively every day was a Saturday.
00:54The word of mouth has really helped push that into the new year as well
00:58where we're still absolutely jam-packed at the weekends.
01:01We're still getting full settings throughout the week as well.
01:05So January hasn't been as quiet as most places would say.
01:10The concept came from Jonathan and Daniel, our directors.
01:14What they really wanted was their bread and butter.
01:17They are chefs and they wanted to create something that's a bit more unique to not only just Glasgow city centre
01:25but just in general taking inspiration from the decor is quite American diner-esque
01:31where we've got big booths, red leather, pots of coffee kicking about, things like that.
01:36But then also on top of that with the menus as well.
01:40We wanted to elevate it and take inspiration from cocktail bars in Paris, New York.
01:46Because it's in a basement and there isn't really much signage for it, it does kind of give that speakeasy element to it.
01:52It's not a speakeasy. It's in a basement, that's all it is.
01:58I think the really key thing that we were trying to drive here is a unique experience
02:02where it's not just about the foods and the drinks which is what you can get.
02:06There are thousands of venues, licensed premises in Glasgow.
02:10Curated experience around food, drink and music.
02:13So at the weekends you've got DJs coming in that are doing curated playlists
02:19and then throughout the week as well we've got DJs that have created playlists for us that we're playing their sets as well.
02:25So it makes it a really unique experience to come in because you're not just getting any other playlist off Spotify
02:35or any other restaurant playlist that you'll hear everywhere else.
02:39It's actually music we've designed and put in for this time.
