A new restaurant promising to bring an unpretentious, accessible, yet ambitious dining experience is coming to Manchester this year.

Talented northern-born chef Tom Barnes is opening Skof, a restaurant aiming to make local ingredients take centre-stage.

Known for working in some of the best restaurants in the world, Tom is developing a range of deceptively simple dishes brimming with technique and full of flavour for the eatery - which will be his first solo venture.

The new restaurant is opening in the city centre's NOMA neighbourhood in May, and Tom joined his mentor, three-Michelin-starred chef Simon Rogan, as keynote speakers at this year's Northern Restaurant and Bar trade fair.

01:11 bring the two together." Tom and other restauranteurs have been visiting the two-day
01:15 conference at Manchester Central Convention Centre between the 12th and 13th of March.
01:20 The trade fair aims to bring together operators and suppliers from across the north,
01:24 with hundreds of stalls, live demonstrations and keynote speakers. "It's such a big city and,
01:29 you know, like I said, there's something here for everyone. So I think there's a lot of potential
01:33 for growth as well. So I'm just super excited to get going and I just want to be a part of it.
01:37 And everyone's been really welcoming to me. Like when the news broke, a lot of people reached out
01:41 to me. It was really nice. Yeah, I'm just excited to get cracking." "So we're going to be opening
01:45 up in around May time. It's going to try and create a really fun restaurant. You know, everyone's
01:49 welcome. A lot of nice music being played, amazing food, tasty food, using producers from around the
01:55 northwest and Simon's Farm as well up in the Lake District. The food's going to be influenced from
02:00 everywhere I've worked really. So, you know, I'll take influence from a little bit Nordic,
02:04 a little bit French, a little bit Japanese, all using sort of British ingredients,
02:08 tie them all together and hopefully create something that's quite unique."
