Crunchy Aloo Bhujiya Namkeen, Crispy Batata Sev Bhujia,aloo sev kurkure, White Potato Sev
Ingredients :
Boiled Potatoes (उबले हुए आलू ) - 3 ( 300 gms )
Semolina (सूजी ) - 1 cup ( 180 gms)
Salt (नमक ) - 1 tsp or to taste
Oil (तेल ) - for frying
How to make Namkeen Sooji Potato Bhujiya :
1. Heat up some water in a vessel, add salt and some oil to it. Cover and let it boil. As water boils turn off flame.
2. Add fine semolina, mix well. Cover and keep it for 5 minutes to puff up.
3. Take boiled potatoes, peel and finely grate them.
4. Semolina is puffed up take out in a plate. Grease hands with oil.Mash and smoothen the dough well.
5. Mix the semolina dough with the grated potatoes, knead well till it smoothens and blends well. Meanwhile heat up oil to fry the sev.
6. Take the sev press machine. Take the fine pored jali for sev, put some dough in the machine. Check if the oil is suffeciently hot.
7. Once the oil is righly hot,rotate the machine and put to fry the sev, as much as it fits in the wok. Flip it as the foam over oil reduces, Put flame to medium.
8. Once fried , take out the sev on a strain, drain excessive oil, keep over tissue on a plate. Fry all sev likewise.
Serving:
9.Potato Crispy Sev is ready.As it cools, keep in open for 1 to 2 hours, then fill and keep in an air tight container, and relish for over a month.
