00:01When you were first approached about this project, what did you think?
00:04I hated the whole idea of this movie.
00:06It's so serious. I don't even know that we deserve to live.
00:10But as a young cook, I came up in an old-school system,
00:13use everything, waste nothing.
00:17I've actually never thought about what happens to my food when I throw it away.
00:23In the United States, 40% of the food we produce is going to waste.
00:27Food production is the single biggest cause of deforestation.
00:31Water extraction, biodiversity loss.
00:34More and more people are concerned about climate change.
00:36And one of the biggest contributors to greenhouse gases is the food that they're throwing away.
00:40We are literally taking food out of the mouths of the hungry
00:44and sending food waste into landfill.
00:46That is crazy.
00:48We don't need to produce more. We need to act different.
00:53What does a chef do?
00:54They take something that's ugly and tough and transform it into something wonderful.
01:00We celebrate utilization of nose to tail for an animal, but rarely for a farm.
01:06None of this typically gets consumed.
01:08That's delicious.
01:09Wow.
01:10That's what I love about waste.
01:11You have to look at it in your kitchen in a different light.

01:17People think it's a garbage fish.
01:18I put it on the menu as Arata Americana.
01:21So you make up a name.
01:22I mean, this is awesome.
01:23Fisherman's wives took this reject fish and they created bouillabaisse.

01:29That is a waste-fed fig.
01:31They're not sold as waste.
01:33They're sold as delicious dishes.
01:35We have the power to demand change from the food industry.
01:39Unless we shout about it, they'll never change.
01:43We need to harness people's obsession with food right now.
01:47We're learning from that resourcefulness.

01:51This isn't like the best thing I've ever had.

01:54It really does come down to what are our values as society.

02:02Tackling food waste doesn't need to be depressing.

02:08You can reduce the amount of food waste.

02:15No one can enjoy the smug self-satisfaction of doing the right thing.
