00:01Winifred's is a predominantly British food with English wine, spirits and beers.
00:07We're very lucky to have the sea that way and farms that way so we're kind of
00:12the middleman bringing it all together. So I have travelled to New Zealand,
00:19worked a little bit there, travelled around Asia and kind of picked up
00:23different bits and bobs there, so different techniques. But predominantly
00:27I trained in Oxfordshire at a place called the Fat Fox Inn. I was there for about six years.
00:32So it's a small place designed for shearing, very, very informal. The concept is
00:37you're essentially coming into my house and the menu changes daily,
00:42so it depends what we have available, what's seasonal. And yeah, just very, very informal,
00:48not your typical restaurant at all really. We came to Hastings about eight years ago
00:52just because we wanted to be by the seaside, like many others down this way.
00:56Just wanted to be by the sea and I worked at a place called Queen's Delhi,
01:01was there for two or three years and then went on to the Stag in the old town,
01:06was there for about five years. I think I've worked in some quite busy places
01:10and in cities where it's very fast-paced. Here you just get a chance to meet more people
01:16and talk to people, which is lovely. And yeah, hopefully expand in the future,
01:21but baby steps one step at a time.
