00:00This is not just any asparagus, this is the first British asparagus only available in M&S.
00:08I'm in the Wye Valley in Herefordshire on Chris's family farm and apparently we're going to go and
00:12see some asparagus. Certainly are, let's go and have a look. Chris what do you think makes this
00:17M&S asparagus so special? Firstly we're in the Wye Valley, the climate here is just wonderful,
00:21it's a really really early part of the country, just warms up really quick in the springtime,
00:26we get plenty of water and we've got the very mineral rich soils, so very sandy soils and you
00:31get a lot of flavour coming up through that, you are tasting exactly what's coming from that soil.
00:36When would you say asparagus growing season is? Traditional asparagus season 23rd of April through
00:41to the 21st of June, so St George's Day to Midsummer's Day. Obviously we're here now in
00:48March, some of the varieties that we've got now just get up and going a bit quicker in the
00:52springtime at slightly lower temperatures and as you'll notice like from the same couple of
00:56meters of row we've got super skinny ones to super chunky ones and that is the way the asparagus crop
01:01grows, that's why in store we've got anything from extra fine asparagus through to king asparagus
01:06packs. The king asparagus is delicious, it's so good. It's just much more moist in a way,
01:11it's got less skin in a ratio of the spear. All you're doing when you're cooking asparagus,
01:15it's only done to taste, you're softening those spears and if you've got the chunkier spears
01:20they're just that much easier to cook. So you could cook them a bit quicker if you're
01:23super hungry and quite greedy. Absolutely right yeah, straight through.
