00:00On every Valentine's Day, I do something very personal.
00:11I bake red velvet cupcakes and distribute it to each and every person I know who means
00:15a lot to me.
00:16So here we are today at Cake Story demonstrating the red velvet cake to you.
00:22There's butter for the moistness, sugar for the sweetness, flour which gives it the
00:28moist structure and eggs that make it light and fluffy.
00:31We're going to take 90 grams of butter which we're going to cream together with the icing
00:36sugar or the powdered sugar.
00:38We've got 145 grams of flour which we're going to combine with 15 grams of cocoa.
00:43We're going to add in a pinch of salt and some baking soda.
00:47We've got two eggs, we've got a quarter cup of milk, half a cup of yogurt, vanilla extract
00:53and red food colouring.
00:55We're going to start with creaming off the butter.
00:58You're going to take room temperature butter, not too hot so that it's easy for you to cream it.
01:04It takes a couple of minutes to just cream the butter and once you add the sugar, you
01:08need to keep mixing till you get the right texture.
01:11The texture would be light and fluffy.
01:13The colour will become lighter.
01:15We started with low speed and now we're on speed level 2 and gradually you can increase
01:21your speed.
01:22Do you see the texture now changing?
01:24It's getting creamier, lighter.
01:26That's when you know you're coming close to creaming it perfectly.
01:31Unlike butter and sugar, egg doesn't mix in with the two ingredients very well.
01:35So if one egg is added at a time, make sure it's evenly mixed with the butter and sugar
01:40and only then you're ready to add the next one.
01:46So as you see, now I've incorporated the egg into this earlier mixture and I'm going to
01:50add the next egg after this.
01:53I'm going to add the next egg now.
02:04Now we come to the dry ingredients.
02:06I'm going to mix all the dry ingredients together.
02:08That's the flour, refined flour, the cocoa powder, half a teaspoon of baking soda and
02:16a pinch of salt.
02:21And now I'm going to take all the wet ingredients together.
02:25That's the milk, the yogurt and then I mix the red colour into this.
02:36I'm going to be incorporating the vanilla now.
02:39Just give it a quick mix and finally we'll fold in the wet and dry ingredients alternately.
02:46I'm going to add a bit of the dry ingredients first.
02:51Beat it a little.
02:55And alternate it with the wet ingredients.
02:59I'm going to scrape the sides to get the flour into the centre.
03:03Finally, I'll scrape the sides, get all the flour in the centre, make sure all the ingredients
03:22are mixed properly.
03:23So I always turn it upside down to make sure everything is evenly mixed.
03:28One last mix and we're done.
03:33Now this batch is perfect for a 1kg cake.
03:38So what we're going to do is take two 6 inch pans.
03:41I'm going to line the cake pan with butter paper and I'm also going to use some pan coating spray.
03:52That's about it.
03:56In case you don't have the pan coating spray, you can just use some melted butter and run
04:00it around the sides and the base.
04:10So now it's time to put these cakes for baking.
04:13I've got a professional oven here, that's why the temperatures are slightly different.
04:18But for all you home bakers, you're going to bake at 180 on the option upper and lower
04:23for about 20 minutes.
04:25So while the cake is being baked, we're going to start making the frosting.
04:28We're going to do cream cheese frosting which is very simple, just 4 basic ingredients.
04:33We're going to take 50g of unsalted butter, 60g of icing sugar, 230g of Philadelphia cream
04:40cheese, full fat and just a little bit of vanilla.
04:44We'll start beating the butter.
04:46Beat the butter till it's nice and soft.
04:50I'm going to add the icing sugar.
04:59Only once the icing sugar is completely mixed with the butter, we're going to add the cream cheese.
05:12Don't over beat the cream cheese otherwise the filling will begin to split.
05:16So make sure you mix just enough for it to blend.
05:29Finally, I'm going to add the vanilla.
05:34And that's your ready cream cheese frosting.
05:37Now once our cakes are ready, we're going to level the cake out.
05:39So I'm going to take a bread knife and I'm just going to level it out.
05:43There you go.
05:46And now what we're going to do is take a little bit of the cream and place it on the
05:50board to make sure that the cake doesn't move while icing it.
05:53I'm going to take a dollop of cream and just sandwich the two cakes with the cream.
05:59We'll put the crumbs down so that it's easier for them to spread.
06:05Again, I'm going to take some cream and paste it on top.
06:11I'm also going to add some cream on the sides to bind the cake together and to get a neat look.
06:17So we've crumb coated the cake.
06:18We've filled it with some filling inside and worked on the sides as well.
06:22And now it's time to ice the cake.
06:24So what I've done is I've taken the simple frosting that we had and added some pink color into it.
06:29A few drops of red would give you pink.
06:31And we're trying to do an ombre cake.
06:33So we're starting with the pink, going into a lighter pink and then maybe a shade lighter.
06:38So I'm just going to add a little bit of pink.
