00:03So this is true wild rice.
00:04So this rice comes from one of the tribes in Wisconsin, not very far from us, from Bad

00:09So presumably, you don't want to use anything that came in with the Europeans, but that's
00:12a lot of stuff.
00:13That's like, was there any dairy here before?
00:15No dairy.
00:16We're child-rearing, but we cut away dairy products, cane sugar, wheat products.
00:21Beef, pork, chicken?
00:22Beef, pork, chicken, because none of those things existed here not that long ago.
00:25So what do you use instead?
00:26We use a lot of elk, venison, we've had moose, we've had beaver, we use a lot of freshwater
00:33fish.
00:34What about sweet things, though?
00:35Yep, so many amazing berries everywhere.
00:37We're just trying to feature things that are very seasonal.
00:40This is huckleberry, this is coming from the Pacific Northwest.

00:50Today's dish of wild rice, mushrooms, white cedar, and huckleberry smells amazing.

01:05Oh, that's delicious.
01:07It's simple, and it's just flavors of where we are, and you get a little hint of that
01:10white cedar in the mix of there.
01:12Yeah, I didn't know you could eat cedar.
01:14Yeah, it's good.
01:15It kind of tastes like the forest, yeah.
01:16I've never tasted a flavor like it before, but it's delicious.
01:19Yeah, and to me it just tastes like if you're wandering around the forest north of here,
01:22you see those trees all over the place, you can smell that smell in the air, and it tastes
01:25like that.
01:26That's what it is.
01:27It tastes like a forest smells.
01:28Yeah, absolutely.
