Renowned Australian Wagyu producer David Blackmore speaks about his new breeding venture with Spanish cattle, Rubia Gallega.

00:00Hello, I'm David Blackmore. We've been known for our Wagyu production, but the fine dining
00:07restaurants we supply are all looking for a grass-fed product, or as we call it, pasture-raised.
00:14In France, in our distributors, we found some unbelievable beef, and on research we found
00:19it was a Spanish breed called Rubia Galea, and we imported embryos and semen, and have
00:26now established our own herd, and now marketing our Rubia Galea pasture-raised beef into those
00:33same fine dining restaurants as we've got our Wagyu beef.
00:36And David, what are the cattle that you've got behind you? How old are they?
00:40So the cattle behind us are probably just two-year-old steers, and they've probably
00:45got about 120 days before we would be sending them off for processing, and then to the restaurants.
