00:30For it to find its place in a city that I'm very proud to cook in, it's not designed for
00:36a year or two, it's designed as a permanent space for me to come and cook for the people
00:41that I work with to showcase producers and suppliers that I've been working for for years
00:46so it's finding a home for them really and a home for people to come and eat, relax and
00:49enjoy.
00:50And are you happy with the location of it?
00:52I mean Barry Fish was always about Leith, from the very beginning it started on an industrial
00:58estate five minutes walk from here, it had to be Leith, I didn't think we'd be on the
01:03shore but that's only a bonus.
01:06Ahead of the official opening on Wednesday February 12th, Barry told me what diners can
01:11expect at Edinburgh's newest restaurant.
01:17I think ultimately hospitality, good cooking, warmth, generosity and hopefully some nice
01:23nuances make it a little bit different I hope from some of the other fish restaurants, we're
01:28looking for injecting a little bit of personality, ultimately good produce, good cooking.
