In this video, Nicole shares five of her favorite super simple slow-cooker chicken recipes! Featuring keto ranch chicken, baked chicken, lime cilantro chicken, buffalo chicken sandwiches, and barbecue chicken.

00:00I'm showing you five of the easiest chicken dinner recipes
00:07that all start in the Crock-Pot.
00:08It's just a couple pantry staples
00:10and fresh chicken of all varieties.
00:13Minimal ingredients, maximum flavor.
00:15Let's do it.
00:17Number one, bacon and ranch.
00:19Some may call this keto-friendly.
00:22I call it damn delicious.
00:24For this one, I am using boneless, skinless chicken breast.
00:27I'm keeping it kind of chunky
00:28because when you see how I serve it up, you'll see why.
00:31To that, a block of cream cheese.
00:34The old packet, y'all's favorite thing.
00:36Whatever ranch flavor you like.
00:38Some like the spicy one,
00:40some like the fiesta one or whatever.
00:43Just regular old ranch going in.
00:45And then just a little bit of water
00:46to kind of help give it some moisture and some sauciness.
00:49And that's it.
00:51And then this just cooks on high for a few hours
00:53or low for, you know, five to six hours.
00:56Whatever you've got time for.
00:59Don't get scared.
01:00What's gonna happen is we're gonna stir it all together
01:02and it's gonna get creamy.
01:04All right, this is when you add in the cheddar and the bacon.
01:08First, the cheese.
01:13That's the bulk of your meal.
01:14You can eat that over rice.
01:16You can eat it just as is with a salad and a baked potato.
01:19That means this dinner is still five ingredients.
01:22Little more cheese, little more bacon,
01:26and a hint of freshness.
01:28Serving suggestion number one.
01:30If you're trying to feed a house full of hungry people,
01:33stir in some cooked pasta and you will be a hero.
01:37Now you have chicken bacon ranch pasta.
01:41My daughters would eat the hell out of this.
01:45Oh, look at that.
01:46Taste test time.
01:50That's stupid.
01:51I didn't even add any extra salt and pepper
01:53and there's so much flavor.
01:56This next one is a little trick
01:57I like to keep in my back pocket.
01:59A whole chicken in the Crock-Pot, no liquid, no nothing.
02:03I'm going to just place some potatoes down.
02:06You know, it gives it a little better chance
02:07of browning all around,
02:08but most of the time I don't even do this.
02:10I loved this whole recipe so much that at my wedding,
02:14I just made little spice packets with this recipe attached
02:17on how to cook a whole chicken in your Crock-Pot.
02:19That was my party favor.
02:21People made that, okay?
02:23And they told me about it.
02:24And then you just season your chicken however you want.
02:28I'm using just like a seasoning blend.
02:31Lots of pepper.
02:33Then I'm just gonna add a little paprika.
02:35You get the gist.
02:36You could use Cajun seasoning, barbecue seasoning,
02:39lemon pepper, whatever you want.
02:41And now you just place it right on top.
02:44I mean, do I need to repeat that?
02:47You just cook this on high for like four hours
02:49or you can just crank it to low, go to work.
02:52It'll be perfect when you get home.
02:54Whole chicken in a Crock-Pot.
02:56Now, of course it's not a roasted chicken,
02:58so you're not getting that crispy golden skin,
03:00but you are still getting a lot of flavor.
03:02And look at all the juice at the bottom.
03:04This chicken's not for presentation.
03:06This is for functionality and deliciousness.
03:09So tender.
03:15What we always do if I make it this way
03:16is just kind of serve it with a big Caesar salad
03:19or some little crusty bread, a little mayo,
03:25some chicken, some of those juices,
03:29and lots of cracked pepper.
03:31I love this so much.
03:32Just this with a cold glass of wine.
03:36This is simplicity at its finest.
03:38Next, cilantro lime chicken is in the all recipes

03:46and for Crock-Pot recipes.
03:47I'm telling you, you can make this whole pot of chicken
03:50for less than a burrito bowl at Chipotle.
03:52Just saying.
03:53The only thing you have to do is chop up some cilantro.
03:56And if you think cilantro tastes like soap,
03:58then you can consider this a four ingredient dinner
04:01and leave it out.
04:02This with the cilantro and fresh lime is the best.
04:07To that, I'm going in with the fresh cilantro.
04:11The juice of a lime.
04:13The guy I used to watch on the Food Network,
04:15remember he used to do this trick.
04:18You get so much more juice out of your lime.
04:22No comments.
04:23And then a pack of taco seasoning.
04:27Stir it up.
04:28Actually, this recipe calls for
04:30the boneless, skinless chicken breast.
04:32But for this, I like to use
04:34the boneless, skinless chicken thigh.
04:36A, it's cheaper, and B, you're less likely to overcook this.
04:40Sometimes when you do all those shredded chicken recipes
04:42in the Crock-Pot, they get like really just dry.
04:45You're not gonna have that problem
04:46when you use the chicken thigh.
04:49Any of my favorite tongs lying around?
04:51In they go.
04:52You wanna give them a good toss around
04:54in that salsa mixture and then set it and forget it.
04:56Sound on, people, sound on.
04:59When this is done, I'm gonna show you
05:00my favorite ways to serve it up other than tacos.
05:05Mm, mm, mm.
05:06It's got its own sauce in here.
05:08And at this point, all you do is shred it up.
05:10You don't even have to do anything.
05:14Mm, mm.
05:15That's delicious.
05:17This chicken makes the best quesadillas,
05:19and sometimes quesadillas just feel different
05:22than a normal Taco Tuesday.
05:24But what I do the most with this
05:25is just make little burrito bowls.
05:27I love to start with these like ready packs of rice.
05:30Don't forget that delicious liquid.
05:33I'm going in with some cheese.
05:35Little red onion.
05:36Tomato.
05:40Finish it off with the title of the recipe.
05:42A little cilantro and a little lime.
05:45They say if you microwave your lemons or limes,
05:47you get more juice out of them.
05:51Huh, it works.
05:52That is gorgeous.
05:54You know it is.
06:00Mm, that is good crock pot chicken.
06:05Next.
06:06Everyone knows this next one, the buffalo chicken.
06:10And it only has four ingredients.
06:11The boneless, skinless chicken breast.
06:12This one is gonna end up as the shreddy kind.
06:15Buffalo and ranch go together like peanut butter and jelly.
06:19Pour on the buffalo sauce.
06:22And then just add in a couple tablespoons of butter.
06:28Locked and loaded.
06:29Crowd pleaser.
06:30Perfect for a party.
06:31Perfect for meal prep.
06:34Come here, look.
06:36Doesn't look like much now, but just wait.
06:38This is another shreddy chicken.
06:41This is cooked perfectly.
06:43You don't wanna overcook your chicken.
06:45I think people, you know, overestimate.
06:47If you need to go longer,
06:49like you're gonna be gone for a while,
06:50then start with frozen chicken breast.
06:52That way, you've got a little more time
06:55without drying out your chicken.
06:58Mm, why do bad things have to be so good?
07:02I mean, it's done.
07:03Get yourself some slider rolls or hoagie buns
07:07and make some buffalo chicken sandwiches.
07:12We're just gonna keep things simple.
07:14And double duty.
07:16Turn this into our favorite party dip.
07:20Add it to some cream cheese.
07:23Add in some more sauce and some more cheese.
07:26Just a little more ranch.
07:28Come on.
07:30And you've got the best buffalo chicken dip
07:32because you're starting with flavorful buffalo chicken
07:36instead of just canned chicken or rotisserie chicken.
07:39Don't say I never taught you anything.
07:46Heat that up and serve it up.
07:48Now, this is one of my favorite things in the whole world.
07:55Listen, I just thought about something.
07:57You could make this whole situation in the crock pot
08:00after your chicken's done,
08:01just stir in your cream cheese and your cheese next time.
08:04We'll do that next time.
08:06Are you ready for my final trick?
08:08This last one is the no-fail barbecue chicken.
08:11When you're craving it but you don't feel like dealing
08:14with all that grill stuff.
08:15You can use whatever cut of chicken you want here.
08:17I am doing bone-in chicken thigh,
08:20which of everything I've used,
08:21this is the cheapest plus for barbecue chicken.
08:24It creates the most tender, perfect chicken.
08:28A bottle of whatever your favorite barbecue sauce is.
08:30I like to go with one that's a little bit thicker
08:32and sweeter because it creates more caramelization
08:35on the chicken.
08:35To that, I'm just gonna go in with some garlic powder
08:38and some crushed red pepper,
08:41a little bit of vinegar and brown sugar.
08:43Then just stir that all together and pour it over.
08:47Save a little bit for the end.
08:50There's just no guessing required.
08:53I mean, that looks like a good piece of barbecue chicken
08:55if you ask me.
08:56If you want to take this one step further
08:59and kind of get that char-broiled kind of flavor,
09:02put it on a baking sheet,
09:04pop it under the broiler for just like a minute.
09:08All that barbecue sauce is gonna caramelize
09:10just as if you had it coming right off the grill.
09:18Just go over there.
09:20That's a barbecue dinner that came straight
09:22from the Crock-Pot.
09:23Drizzle it with a little of that sauce I saved earlier.
09:26That's some barbecue you can even cook in the rain.
09:29I don't wanna mess up that pretty plate.
09:31Oh, this is fall off the bone.
09:36Oh my God, that's delicious.
09:39This finger looking good.
09:40I don't think we can say that.
09:41You don't think we can say Super Bowl
09:43either than a million other people?

09:45That is even better than I thought it was gonna be.
