00:00Usually, when we make pancakes, we use all-purpose flour.
00:05But you know what?
00:06You can also use rice flour.
00:08We're going to make Rice Pancake with Lambanog Tanglad Syrup.
00:12Before we prepare our pancake components,
00:14let's prepare the syrup first so that later,
00:16by the time everything is cooked,
00:18our syrup will be cold and we can drizzle it.
00:21So we have our tanglad.
00:25We'll just put it in our pot with water.
00:28Basically, infusing it.
00:30And one of their products here in the farm,
00:33their lambanog.
00:35Few tablespoons.
00:36And then while we infuse that,
00:38let's prepare our pancake components.
00:41So in a bowl, we just need to separate
00:433 egg yolks and 6 egg whites.
00:47So let's just scoop that and transfer it.
00:50We're okay with the 3 egg yolks,
00:51but for the egg whites only,
00:53we'll just add additional.
00:56Let's set aside our egg whites.
00:59Let's concentrate on our egg yolks.
01:03Let's just whisk this.
01:05Then let's add our rice flour, coconut cream.
01:12And then our coconut oil.
01:20Let's set aside our pancake mixture.
01:22Pancake mixture.
01:23Now, let's go to our meringue.
01:25And let's beat our egg whites.
01:27This is one of the important components
01:29of why you'll get fluffy.
01:32It's like a Japanese pancake-like finished product.
01:43So let's just add butter.
01:46In this procedure, in this recipe,
01:49you don't want your pan to be too hot.
01:52The tendency is that if it's too hot,
01:54the bottom will burn,
01:56and there won't be a chance for the vapor or steam
02:02to rise inside your pancake to make it fluffy.
