00:16 As well, to start with, you can have some fritti,
00:20 some side dishes as well,
00:22 some different kind of charcuterie,
00:26 like speck, like parma ham as well.
00:29 We suggest to have more than one dishes,
00:33 because the portion is going to be a little bit smaller than usual.
00:36 It's going to be 100 grams of pasta, really still filling,
00:38 but in this case you can try all different kind of pasta or pizza that we propose.
00:47 As well, we've got a lot of different kind of options,
00:50 like vegetarian or vegan as well,
00:53 because some pasta can be vegan.
00:55 The pasta is going to be all fresh,
00:59 some of the pasta make it without egg,
01:01 so it's going to be eggless,
01:03 it's going to be fine with the vegan option,
01:06 and as well some of the sauces are going to be the same.
01:09 Even for the pizza, we're going to have a couple of vegan,
01:13 and four or six different vegetarian options as well.
01:18 All this kind of pizza and the pasta,
01:21 we're pairing with West Brewery beer,
01:24 which is a brewery here in Glasgow.
01:31 We tasted a lot of different kinds of breweries,
01:37 but to match our menu, we chose West Brewery.
01:44 We got only eight beers from them,
01:48 over the 40 different beers that go in the portfolio.
01:53 We're going to change every season,
01:56 it's going to be seasonally,
01:58 for the food and the beers as well.
02:01 Each dish is paired with a different kind of beer.
02:05 We're going to have the Riccardo di Carbonara,
02:08 it's paired with the Mungo,
02:10 so it's a nice lager, simple, not too spicy, not too fruity.
02:17 Then we go, for example, with the vegan option,
02:19 with the Orecchiette Verdi,
02:21 something lemony as well,
02:23 we got the Velo Lemon from West Brewery.
02:26 That's why we got a non-alcoholic option,
02:30 or a low-alcohol option for West Brewery.
