Arguably, the Airmail could also be thought of as a sparkling Daiquiri. In this variation, Charlotte layers on the flavors of both fresh muddled pineapple and The Bitter Truth Aromatic Bitters.

Recipe:
5 or 6 chunks of fresh pineapple
1/2 part fresh lime juice
1/2 part 2:1 honey syrup
1 1/2 parts Flor de Caña Seven Year Rum: http://bit.ly/flordecanarum
2 dashes of The Bitter Truth Aromatic Bitters: http://bit.ly/bittertrutharomaticbitters
Champagne or sparkling wine
Instructions:
Muddle the pineapple in a mixing glass.
Add all remaining ingredients except Champagne.
Shake with ice.
Double strain into a Champagne flute.
Gently top off with Champagne.
Garnish with a mint leaf.
