Gajar Ka Halwa - Carrot Pudding - Vegetarian Recipe
INGREDIENTS-
500 gm grated carrots
500 ml milk
3/4 cups of sugar
1 tbsp. clarified butter (ghee)
almond flakes
1/2 tsp. roasted cardamom powder

METHOD-
Heat 1tbsp. ghee in a pan. Add grated carrots. Stir it well. After cooking for 1 to 1 and half a minute, add milk. Mix it well.
Let the mixture cook for 10-15 minutes till the milk is reduced to half.
Add half to 3/4th cup of sugar, as per taste.
Cook till all the milk and water is dried out.
Add 1/2 tsp. roasted cardamom powder and some roasted almond flakes. Keep it for cooling for 30-40 min so that it sets nicely.
