00:49:21the local soil is very important in relation to the varieties of wine we can produce this is
00:49:27decomposed granite soil which is best for making syrah but we can grow all kinds of bordeaux grapes
00:49:32because of the wind of the civic ocean and how do you know that because i have to take over
00:49:39the winery someday and i have to know everything

00:50:43the alcohol is created naturally by the addition of action yeast when it's ready
00:50:48the wine is transferred into oak barrels and moved to the aging room this way
00:50:58wine is best aged at a temperature of between 55 and 58 degrees extreme heat and cold is very
00:51:05detrimental to the wine during aging we use oak barrels for control of the oxidation
00:51:09excessive oxidation causes the wine turn bitter and you know this because everyone knows that come on
