00:00XTU Nation, hey there, it's the Andy Summers Show, and Jeff and I are sitting across from someone who is making us very happy in the happiest place on earth.
00:09Hey there, Fifth Shillip. How about Chef Phillip? My mouth is watering so much I can't even talk.
00:15She's so excited for the cake that's in front of her.
00:17I'm going to eat, and you guys talk.
00:18I think we have to, Chef Phillip, we have to first talk about what you just put in front of us, and then I want to get more into the food that we're going to get at Epcot and Disney World.
00:25Yeah, of course.
00:26So what is this?
00:26So here we have our chocolate whiskey cake. So this, oh yeah, I know. So you can find this over at our Northern Bloom Outdoor Kitchen over at the Epcot International Food and Wine Festival, Flower and Garden Festival.
00:36That is going to be owned by the Canada Pavilion.
00:38Oh my gosh.
00:39So one of our returning favorite desserts over here. So, I mean, we cook the chocolate cake. Once it's hot, we get the whiskey syrup soaked into it.
00:46A couple of different chocolate ganaches, maple anglaise on there. It's just chocolate, chocolate, sweet. It's delicious.
00:51But it's not too much.
00:53No, not at all.
00:53I mean, when you say that, I thought, oh, this is going to be sickening sweet. It's not. And that, is that what that is? That maple?
01:00The maple anglaise, yeah.
01:02This is unbelievable.
01:03I don't even know. Okay, you keep talking. We're busy eating.
01:06Can I just say something about the food here?
01:07Okay, so we got here. We went around Epcot. My wife and I, we mentioned this on the radio earlier, so I have to give you credit.
01:12We ate in Mexico. My wife is half Mexican. She is very picky when it comes to her Mexican food, right? She will literally say, we're not eating here. We'll have to take one bite. She's like, it's not worth it.
01:23But she thought it was incredible, which I thought it was amazing, too, the food in Mexico. But that's because I'm just, you know, little white American Jeff here. But she really loved it there. And that's just a vote of confidence as well. I had the tacos and margaritas. It was fantastic.
01:38I mean, it's all legit.
01:39The food here is so good.
01:40Oh, yeah.
01:40It's all legit. Okay, so tell us more fun things about food here.
01:44Yeah.
01:44So, I mean, because obviously in Epcot, I mean, every country has their own food, has its own, right, like that's native to that land or what it's known for or whatever.
01:54Yeah. So, I mean, for us here, so when we do all of our different festival options, so starting with, you know, International Flower and Garden Festival.
02:01Right.
02:02So, a lot of our different pavilions that we'll do, we'll take a lot of inspiration from their cultures and we'll tie it into what the festival story is.
02:11Okay.
02:11So, looking at the International Flower and Garden Festival, we look at just seasonality. So, look at that spring, the springtime, flowers, fresh, all the fruits and vegetables that are coming into bloom right now.
02:23And really look at what they do for, you know, during their cultures, any festivities, any celebrations. And we'll take that into consideration when we're making all these menu decisions.
02:34Yeah. Which is so great because think about it. If you're going to pull your kids out of school for a trip to Disney and you do it around something, really, you can do it anytime.
02:43And when you go to Epcot, you're going to just live so much culture that these countries offer.
02:48But especially during one of the festivals that you have, like, it really lets you immerse yourself into the culture of each of those different countries, which is a pretty cool opportunity.
02:56Can I just add something that's so important for families, too? Disney is so hyper-focused. If there are any allergies or anything, like, they will let you talk to the chef at wherever you are to say, like, hey, this is what my son or daughter has, or this is what they prefer.
03:08And they'll work with you to make sure that they're following and giving your kid or whoever it is a great meal that they're going to enjoy that's safe for them to eat, which is just awesome on your team.
03:18Oh, yeah. And for us, you know, at all the different outdoor kitchens we have, you know, we're very spread out, but they all have a direct line to us.
03:24So in terms of any allergies, concerns, you know, just come up and let us know.
03:28It's like, hey, I have an allergy. And they're calling us, you know, they're getting our attention within seconds so we can take care, you know, of any of those needs or special requests that we could do.
03:38You know, as much within our power as we can. Absolutely. We love it. Okay.
03:42I'm so happy right now. I'm going to put you on the spot here, Chef Philip, okay? Go for it.
03:45And I don't want you, you're not going to offend anybody because we want to know best item you think that you can get to eat in Disney World or Epcot specifically, whatever you want to go.
03:57What's your personal favorite? I know you're involved in it all. My personal favorite.
04:00Besides this.
04:02That's so good. I've been eating it. I can't stop eating it.
04:04I feel so rude in the middle of this interview. I'm like, yeah, uh-huh.
04:06You know, honestly, I have, I gotta have, like, it's a special place in my heart just because my culture, my upbringing.
04:14So one of the new items that we have for the International Flower Garden Festival is a Cubanito.
04:19So a little Cuban sandwich that's coming new to our menus over at the Florida Fresh Outdoor Kitchen.
04:24So we're in Philadelphia, so there's a lot of people that don't really know what a real Cuban sandwich is.
04:28Can you talk about that?
04:29Yeah, so it all starts with the bread. So a nice Cuban bread. We'll do a kind of, like, a mojo pork style.
04:36So we'll take the pork shoulder, we'll cook it down, we'll break it down. We'll spread that on the sandwich there.
04:41Ham, Swiss cheese, pickles, mustard. And it's just pressing that sandwich down nice and crispy.
04:47So it goes from this nice stick sandwich to a nice skimmer sandwich. All those flavors just melted together.
04:51So it's like a panini almost, right? The way that you squish it like that.
04:55Okay.
04:55Yeah.
04:56So good.
04:56And you said it's a Cubanito.
04:59Yeah.

05:01Which is awesome, too, because, you know, at least for me, when I'm on a trip, when I'm at Disney World, I don't want to eat big portions.
05:07Right.
05:07Because I want to eat all day long.

05:09So then you just, you pick all day.
05:11Right.

05:12Perfect.
05:13And this one's great.
05:13It's really handheld.
05:14Just take, you know, grab it.
05:15You go around the rest of Epcot.
