We went down to Nibble NQ to learn a bit more about this wonderful female-run business and their excellent cakes.

00:00Where is the best coffee in Manchester? Now that's a very good question and there
00:03maybe isn't a single obvious answer but that's a little mission that we've set
00:07for ourselves. So far in this series we've gone to 200
00:10degrees coffee and we've gone to factory coffee and
00:13today we are going to Nibble in the northern quarter.
00:15It's a female rum business with some of the nicest cakes that you'll find around
00:19the city. So we're going to go there now, talk to the owner and try and learn a
00:23little bit more about their story. So my name is Lauren Adam Chisakis
00:27and I own Nibble in Queue. So I always ran places for other people
00:34and it was always like a dream of mine to have my own place
00:37and the long story short is I came in here to be nosy
00:41and two weeks later I ended up having a cafe. I think the main thing
00:46now which wasn't a thing that I necessarily set out to do but
00:49kind of organically became something I was good at
00:52was providing options for like all darcher requirements so we've actually
00:56built up a really good reputation for like gluten-free in particular
00:59um so I think on some of like the gluten-free apps that I actually didn't
01:02know existed we're like number one on that
01:03and that's more as a result of wanting to make sure that everybody has
01:07an option it's not it wasn't something that was like the design
01:11they can I'm literally they can see me keep cooking everything so they know
01:15I'm not messing anything up like they just feel
01:18good and confident with what they can eat and that they can have a nice time as
01:21well as their pals. I think it was something that
01:23developed I think we were getting people in that were asking for certain things
01:26and I because I do all the baking as well so that was the biggest learning
01:30curve because there were recipes that were like old
01:33fatals that I was using I was like okay I'm going to need to change this
01:36so there was a lot of trial and error like early days
01:41no one wants to throw cake in the bin but sometimes if it's not good enough we're
01:44not going to sell it um and so the beetroot fudge brownie so that's vegan and
01:48gluten-free and that took a lot of a lot of trial and error but
01:55since we started doing that since I started baking that
01:58has been our best seller so like for people that aren't vegan and who aren't
02:01gluten-free like that's still the go-to for everybody
02:05so here we are then the traditional flat white and the
02:09beetroot fudge brownie which I'm really looking forward to
02:12genuinely my mum used to make something quite similar
02:15um and as a kid it was always a way of sneaking vegetables into the diet so
02:19this is weirdly going to be a bit nostalgic for me I think
02:26I genuinely remember that flavor really well truly it's really gooey sort of
02:30really fudgy so that is lovely
02:36I feel like we're going to get a lot of nines but again I want to ham home the
02:39point of the series is to try and stop you from going to the big name brands and
02:42try and point you towards places like this awesome cake absolutely awesome and nibbles
02:49top top quality so it's going to be in the nines again we're going to go for a 9.3
