00:04Hi there, I'm Laurie of Sister Bednight located on King Street in the city centre of Glasgow.
00:10I like to describe it as an everyday sandwich store. It's not these like, well, people will
00:15argue that it is these massive sandwiches but I think they're kind of more subdued sandwiches
00:21that you could eat every day on your lunch break. We do good coffee as well and little deli items
00:27that you might pick up for the weekend or for having friends round or to gift someone as a present.
00:34We've also got a really cool book store, magazine store located in the shop. Not run by us, it's
00:40Ripe Magazine. Stupidly I fall in love with shop units and this one had caught my eye and I tried
00:46to get the lease on it for a good few years. I've always really liked this part of the city.
00:51It seems to be where like independent businesses sort of start and thrive
00:56because the rent rates are a wee bit more affordable than a bit further into the city and this unit
01:01really kind of caught my imagination. It's beautiful corner unit, big windows and just a lot of natural
01:07beauty and I knew I wanted to do a sandwich shop at some point in my life and the lease finally came
01:14up for here and I was like bingo, this is where it's going to be. In my generation you would never
01:19dream of opening a business when you were young. That just seemed like the impossible. That was for people
01:24with money and for you know people that were already business people but I feel now people are confident
01:32to kind of just throw everything they've got at something that they're passionate about and follow
01:38it through and I just think that's that's really cool that young people are doing that and people
01:45are just kind of gambling and risking everything to follow what they want to do and I think it's never
01:51been like that before as much. It's always you know it used to be quite stuffy the food industry but
01:57now it's you know relaxed casual but people making some really really amazing things. Pizza joints have
02:03opened up on like a shoestring budget but they're like doing the best pizza that you've ever tasted.
02:08So the main highlight for me is the fact that it's real bread. It's not shop bought chemically,
02:13it's real bread baked fresh every day like no rubbish in it you know like basic basic ingredients. We work
02:21the sandwich fillings around the bread because that's the star of the show. Kind of very loosely based
02:26on sort of Italian deli kind of old school you know with salami and mortadella and mozzarella. I've not
02:33done it but I really like the idea of having like a sort of soprano style deli and just trying to find a little
02:37something for everybody as well. We've got like two vegan options as well and these vegetarian options and it will be a
02:43rotating menu. I will do specials as well I believe it should always be an evolution of the menu if
02:49you think you've completed it and you know you've not like you should probably just give up if you
02:54think you've perfected your your menu you should always keep me pushing and creating.
