02:05I think that they just really understand that when people are well-rested,
02:08when people get a good break and sustenance,
02:10they're able to do work much faster and better afterwards.

02:24which is just, like, reboot the system, eat,
02:27feel like they've had some private time to then come back and work hard.

02:35In other cities, sometimes I'm like, okay, great, I have five minutes for a sandwich,
02:38I'm going to grab it here and I'm going to go over here.
02:40And really, like, Paris, they really respect the dining experience.

02:46but it's more about, like, the quality of time spent with the person.
02:49You're not going to just grab them for a quick, like, five-minute cappuccino.
02:53Like, you're going to sit down for an hour and talk and respect that time.
