00:00Paris 2025 where athletes will fight to become champions and there's one discipline that
00:10rises above all of the others and that is the art of butchery.
00:24Well with a body like this I am a supreme effort it's a temple.
00:28Making butchery in a nutshell is 16 countries from around the world separate teams breaking
00:33down carcasses into primals to value-added products.
00:37Making product that's appealing and cookable and really showcasing the art of butchery.
00:42Each team has three and a half hours to build the best display they can.
00:46Each country uses their own techniques and every display looks different.
00:49They have to be mouth-watering, they have to be jaw-dropping and they have to translate
00:54to retail butchering.
00:55All the team members are all retail butchers.
00:58They've got some unbelievable talent especially representing Australia.
01:01Senior butchers, juniors, apprentice butchers.
01:04Our skills are so transferable from the humble butcher shop to the world stage.
01:09So the products and the skills that we use every day in essence make us better for the
01:13World Butcher Challenge.
01:14It's got to be the highlight of your career hasn't it?
01:17You've made a career out of butchering and now you're going to represent your country.
01:21Is there anything better?
01:22G'day I'm Guy, I'm on the ICOMPAC Young Australian Butcher Team.
01:26We're all going to be meeting here in Sydney right before we fly to Paris and we all can't wait.
01:30Being on the junior team we compete individually so we need to bring a wide range of skills
01:36to a competition day.
01:37We're really excited to support the young butchers to go overseas and get that exposure
01:42to new cultures and new ideas from different butchers around the world.
01:46This will be my first international competition.
01:49To be selected makes me super proud, so super passionate about to show my craft off to the
01:53world and the chance to represent Australia.
01:55Yeah, the boss is a legend, he always lets me practice in the shop, get some good products
01:59going and all the good ideas coming from Paris.
02:03If you want to be a butcher in the Australian Butcher Team you've got to be very highly
02:06skilled.
02:07You have to be competitive, creative and really love the art of butchering.
02:11Hi, my name is Brett Laws and we've come back for gold.
02:14My hands are everything to me, from building a product for my creativity to making the
02:19best in the world.
02:20Wearing the Australian coat of arms on my chest is the most proudest moments of my butchery
02:25career.
02:26What makes the Australian Butcher Team such a powerful force is that we have the entire
02:31Australian meat industry behind us.
02:33We couldn't compete without all the amazing partners that we have.
02:37We are so thrilled to have McAnoy on board, we just could not get to Paris without them.
02:42We love to support the team from Beef Week, Royal Easter Show, Meatstock, leading into
02:47Paris 2025.
02:49McAnoy Meats are very proud of the team, they've done so well so far and they're great
02:54individuals and I'm sure they'll do very well in Paris 2025.
02:58And for McAnoy it's all about the future of the meat industry, the youth, the men, the
03:02women that showcase their skills, it's just fantastic for us and that's what gets us excited.
03:07I'd say being the captain of the Australian Butcher Team is an easy job, I've got a great
03:12squad around me, I've got some great skilled butchers, so all I need to do is basically
03:16steer them in the right direction and the direction is to win.
03:19Besides my good looks, my skill set is boning, preparation and creating value added products.
03:27My role on the team is displaying and garnishing and I do a bit of value adding as well.
03:32The two super skills I bring to the team are my boning, I'm incredibly quick and clean
03:37and my tying is always spot on and the Kiwi's got nothing on me.
03:41This boneless lamb shoulder is comp ready, ready for judging and something that we'll
03:46be producing at the World Butchers Challenge.
03:48Some of the best Australian athletes have had moustaches, from Tex Walker to Boonie
03:53and this ginger moe is going to get me gold.
03:56I've never been to Paris and I know I cannot speak French.
03:59Beating France in Paris would be the silver lining.
04:02It would mean the world to us to know that everyone is there supporting us.
04:05We're coming for you Paris.
04:07Every Australian butcher is part of this journey.
04:09Every mate eating Aussie.
04:11Every chef.
04:12And probably not any vegans.
04:13But everybody else in the butchering industry can come along with us on our journey.
04:18So come on, support us as we take on the world's best, Paris 2025.
