00:00Hey I'm Mark, I'm the head brewer at the Three Tons Brewery in Bishop's Castle.
00:04So we are the oldest licensed brewery in the UK since 1642.
00:09Obviously that's when they got the license so don't actually know how far back it goes,
00:13could go back further. Yeah so we've been going since then.
00:17This is the kettle room, so this is the kettle. This is where we will boil the beer with the hops.
00:24So down there that's the fermentation vessel room, that is part of the original building,
00:29that's from 1642 and this is part of the Victorian renovations that they did in 1880.
00:38So the tower is a part of the 1880 side and then that bit down there is all from 1642 and older.
00:45We like to keep it traditional as far as we can and keep the traditions going and alive and also
00:51we think our beer sets us apart from everybody else as well. We stop at very high gravities,
00:57keep all of the sugar still in there, we try and use unfermented sugars
01:01which keeps it nice and sweet and then loads of malt flavours in them as well as just the hops.
