00:11I wanted to do something which was very different, not run of the mill things.
00:16So then I said I'll do something which is very different, something which nobody in
00:21our family should have done, nobody in our neighborhood should have done, none of my
00:26relatives should be into that.
00:28And also I felt that I had to do something which was creative.
00:32So I was left with very few choices.
00:33So it was either being an architect or doing this.
00:37Then I chose to be an architect of food.
00:40Cooking is all the same, whether you work in a hotel, a restaurant, home or wherever,
00:44it's who you're cooking for.
00:46And because once you have done professional training in cooking, then it's all the same,
00:52then it's not difficult.
00:53The only difference is when you cook in a hotel or a restaurant, at that time you normally
01:00would cook something which is in some sense difficult, different, and something which
01:11is very visually appealing, something which people would pay a lot.
01:15While cooking for TV, if your focus, the show that I started with, the focus was to teach
01:23people how to cook.
01:25So I had to use my training in hotels and restaurants and create things, but very early
01:32I understood that I had to create things which were very simple, yet different.
01:37Here I had to undo all my learnings, yet create, and create things which were meant for people
01:45to learn from, and then they should be able to use that knowledge and create themselves
01:53or in some sense copy.
01:56And in that, I also had to ensure that when they try, they should not fail.
02:01My favourite cuisine has to be home-style food, and it's not just only Indian, it can
02:07be home-style food depending on where I am.
02:11So if I get a chance to eat, if I'm in Italy and if I'm in South of Italy, if I can eat
02:17home-style food in someone's house, that becomes my favourite that day.
02:22So you cannot live with being a chef and who loves to create, you cannot just be happy
02:29with just one thing which is your favourite, that would be so boring that you can have
02:35so many favourites, why would you want to have just one favourite?
02:37In terms of favourite chef, I would say that to me, anybody who can please me with their
02:45favourite food, which is simple, yet different, which would bring a smile to my face, and
02:53where I would say, oh my god, why did I not think of that, becomes my favourite chef.
