We spoke to Bridget Deakin about her Otley restaurant Tapas and Tunes, that's putting a Spanish twist on some Christmas classic dishes this festive season.

00:11We are a restaurant, a tapas bar, and we also have a live music venue upstairs.
00:18We've got a very traditional Spanish tapas menu, but then we also have a specials board.
00:25We love being based in Otley because we've got Otley Market three times a week and we
00:31tend to get our veg and fruit from them.
00:40This is Goshua and it's a traditional sort of dessert that they eat in Spain around Christmas
00:47time.
00:49And we've sort of done a bit of a take on it because it's normally it's sponge with some
00:53sort of liqueur or spirit and then they layer like Catalan custard and cream.
01:01So we've put the cream in the middle and then the custard on the top so that we can then
01:05brulee it.
01:10This Christmas we decided that we'd take some traditional British favourites, for example
01:18turkey and pork and beef, and then we'd put a bit of a twist on it.
01:24So for example the turkey, you can have roast turkey, and then we've taken the Spanish croquettas
01:32and we've flavoured the croquettas with ricotta, white onion and nutmeg.
01:38So in itself it's a British dish but we've given it a Spanish twist.
