00:00Guys, summer season is here which means mango.
00:10I love mango and I decided to create a combination of mango and wings and call it Mango Chilli Wings.
00:16So, let's start cooking.
00:20In a bowl, add KP Flour 1 cup.
00:24Rice Flour 1 cup.
00:27Ground Cumin 1 tsp.
00:30Paprika 1 tbsp.
00:34Turmeric 1 tsp.
00:37Black Pepper 1 tsp.
00:40Salt 1 tsp.
00:44Mix them well.
00:52Heat up the oven to 165 degrees Celsius.
00:55While the oven is getting heated up, apply oil on the wings.
01:00After that, apply the dry rub on the chicken nicely.
01:11Place the wings on the baking tray.
01:21And cook it for 25-30 minutes till it's properly done.
01:26To make the sauce in a large pan, I'm going to add 2 tbsp of coconut oil.
01:34Once the oil starts heating up, I'm going to add cumin seeds.
01:38Red Chilli Flakes.
01:40And cook it for few minutes to let cumin crackle.
01:45Once the cumin starts cracking, I'm going to add in bell peppers.
01:48Bell Peppers.
01:54Garlic Cloves.
01:56Red Onion Chopped.
01:58Ginger Slices.
02:00And saute till it gets nice golden brown in colour.
02:04Reduce the heat to medium low and add in Mango Pulp.
02:19After that, Tamarind Paste.
02:24Jaggery.
02:26Black Pepper.
02:28Salt.
02:32Stir until everything is combined.
02:35And the sauce begins to bubble.
02:43Once you see bubble forming, remove from the heat.
02:45And transfer it to a bowl.
02:47And wait until the sauce has completely cooled down.
02:50And then blend it into a fine puree.
03:09Let's prepare a quick dipping sauce.
03:12For that, I'm going to take a bowl.
03:14For that, in a bowl, I'm going to add Mayonnaise.
03:17Garlic Powder.
03:19Half a Lemon Juice.
03:21And Salt.
03:23Black Pepper.
03:27Mix it nicely.
03:36And set it aside.
03:38Once the wings are 99% cooked, remove them out.
03:41Brush it with the Mango Sauce which we prepared earlier.
03:55And cook it for more 5 minutes.
04:03There you go guys, our Mango Chilli Wings are now ready.
04:06Serve it with Mayo Garlic Dip which we prepared earlier.

04:41I'm going to start this recipe with making the Coconut Milk Sauce...
04:44...for the Sticky Rice.
04:46Now for that, I have 1 and 1 half cups of Coconut Milk.
04:51I'm going to reserve a couple of spoons of the Coconut Milk mixture...
04:56...for the slurry later on.
05:00Set that aside.
05:03And now to the saucepan, I'm going to add the rest of the Coconut Milk.
05:08And 3 fourth of a cup of Raw Sugar.
05:12Now you can use regular sugar as well, just reduce the quantity to half a cup.
05:18And very gently on a medium flame, just cook this mixture...
05:22...till the sugar dissolves completely.
05:31The sugar has dissolved completely in the Coconut Milk.
05:34And it's starting to steam and bubble.
05:37So it's the perfect time to add our slurry.
05:40So I'm going to add a tbsp of Cornflour or Cornstarch...
05:44...to the Coconut Milk that we had set aside.
05:50Just mix this together.
05:58The slurry is nice and smooth and without any lumps.
06:01So I'm just going to pour it into the Coconut Milk mixture.
06:04And just raise the temperature slightly.
06:08And at the same time, just whisk it in really well.
06:20The Coconut Milk sauce will thicken only slightly...
06:23...but that's perfect because we don't want it very thick.
06:26So I'm just going to take this off the heat.

06:32And then add a little bit, a tiny pinch of Sea Salt.
06:37Just to get the perfect balance of flavours.
06:41Our Coconut Milk sauce is absolutely ready.
06:44So let's move on to making the Sticky Rice.

06:52I'm going to add the next layer, very important.
06:55The next layer must be lined with a muslin cloth or a cheese cloth.

07:01Now to the steamer, I'm going to add 1 cup of Glutinous Rice.

07:15This Glutinous Rice is easily available in the market.
07:19So you should be able to find it easily.
07:21And you know Sticky Rice is just such a wonderful dish.
07:24It's worth buying this rice.
07:27And cover it.
07:30And let it steam cook for about 30 to 40 minutes.
07:35The rice has steamed really well too.
07:37Now handle it with care.
07:42Oh! Steaming hot, literally.
07:46So very carefully, just take out the rice.
07:51And put it in this bowl.
07:56Now I'm going to add most of the Coconut Milk Sauce...
07:59...to the rice while it's still hot.
08:01Reserving about 1 cup of the Coconut Milk Sauce.
08:05Don't worry, just like magic the rice is going to absorb...
08:09...most of the Coconut Milk Sauce.
08:11Give that a stir.
08:14Now I'm going to cover this.
08:16And let the rice absorb the Coconut Milk Sauce...
08:19...for at least half an hour.
08:21It's been about 20 minutes.
08:23And the rice has absorbed the Coconut Milk Sauce really well.
08:27So now it's time to plate it up and eat it.
08:34Now it's time to add some slices of fresh Mango.
08:37I'm using Alphonso.
08:39Drizzle a bit more of the sauce.
08:44And garnish it with some Toasted White Sesame Seeds.
08:49And some fresh Mint Leaves.
08:58I'm going to serve this with a little bit of Ghee.

09:08A sour, spicy, sweet Mango Curry...
09:12...is a perfect thing to have in the summers.
09:15So let's make the Raw Mango Curry.
09:21Here I've taken half a kg of Raw Mangoes...
09:24...which I've cut into 2 inch pieces.
09:26I'm also taking the seed as well for the curry.
09:30To this I'm going to add half a tsp of Turmeric Powder.
09:34A tsp of Salt.
09:382 to 3 tbsp of Jaggery.
09:45I'm just going to mix this and keep it aside till we make the curry.
09:51I have taken 2 tbsp of Coriander Seeds...
09:54...which I'm going to roast till the colour changes to a little dark or golden.
09:59My flame is on a medium.
10:01I'm getting an amazing aroma of the Coriander Seeds.
10:04And as you can see the colour is also changing.
10:09This has taken me around 30 seconds to roast.
10:15I have 10 Dry Red Chillies here.
10:17I have used the Bedgi variety.
10:19But if that's not easily available, you can use any variety which is not very spicy.
10:24I'm going to roast this as well for about a minute.
10:28As you can see the colour has changed here as well.
10:30Let's remove this.
10:34I'm going to heat a tsp of Coconut Oil.
10:41And I'm going to fry a tbsp of Raw Rice.
10:46Half a tsp of Fenugreek Seeds i.e. Methi Seeds.
10:51And half a tsp of Cumin Seeds.
10:541 tsp of Fenugreek Seeds i.e. Methi Seeds.
10:58And a tbsp of Urad Dal.
11:02I'm going to saute this for a minute or so.
11:07As you can see the colour of the Urad Dal has changed.
11:10It's become a nice dark brown.
11:12Let's remove this as well.
11:20I have 2 cups of fresh Coconut that I have grated.
11:23I'm going to grind this along with all the spices that we have roasted and fried.
11:38We have to make a nice fine paste.
11:40So keep adding water as required.
11:54This is ground to a nice fine paste.
11:57What a beautiful orange colour as well.
11:59I'm going to heat a Kadai now.
12:01And I'm going to heat 2-3 tbsp of Coconut Oil.
12:06I'm going to splutter a tsp of Rai or Mustard Seeds.
12:13Once the Mustard Seeds splutter, I'm going to add a pinch of Asafoetida or Hing.
12:18And a few drops of Lemon Juice.
12:21A pinch of Asafoetida or Hing.
12:23And a few Curry Leaves.
12:27And the Raw Mangoes that we had kept aside.
12:33I'm going to saute this for a few seconds.
12:38What a delicious aroma, I'm just feeling like eating it already.
12:43This is smelling delicious.
12:45Now I'm going to add the ground paste.
12:52And I'm going to add a cup of water to this.
12:56We already added the salt earlier.
12:59So there is no need to add salt now.
13:01To this I'm going to add 3-4 cup of thick Coconut Milk as well.
13:07Stir this and I'm going to cover and cook it for 5-6 minutes.
13:15We've kept the curry to boil for 5-7 minutes.
13:18The raw mangoes do not take a very long time to cook.
13:21And our curry is ready.
13:24Let's remove this in a serving bowl.
13:38This dish is ready to be served.
13:40You can have it with steamed rice or chapatis.
13:43Anything of your choice.
13:44So do try this yummy, sweet, sour, spicy curry.

13:58And as usual I was digging up my recipe books.
14:01To find something exciting to cook this mango in different ways.
14:05And I came across one such recipe which is the Kerala Mango Curry.
14:09It's made with yummy ripe mangoes.
14:11So for this recipe we need to take ripe mangoes.
14:14Which are the Badami Mangoes or the Totapuri Mangoes.
14:17I have taken Badami Mangoes here.
14:23I have taken 7 mangoes here.
14:26About 2 cups of water.
14:31I'm going to add Turmeric Powder.
14:372 tsp of Chilli Powder.
14:40Some Salt.
14:42And I'm going to just cook these mangoes.
14:50We need to cook these mangoes for 5-6 minutes.
14:53So let me cover it and cook it.
14:59And while this is getting cooked.
15:00Let's make our fresh Coconut and Cumin Seed paste.
15:04So here I'm taking 1 tsp of Cumin Seeds.
15:06And a cup of fresh Coconut.
15:10And now we'll grind this to a nice fine paste.
15:14This is ready.
15:15And now we need to add this to the ripe mango curry.

15:39Again we need to cover and cook this for another 3-4 minutes.

16:00And now what we need to do is.
16:01Shut the flame off and add our Yogurt to this.
16:05I have taken 1 cup of Sour Yogurt here.
16:08Just beat it well.
16:09And pour this into your mango curry.
16:14You can add normal curd to this also.
16:16Mix this well.
16:25So let's finish this gravy by tempering it.
16:28I'm going to heat 2 tbsp of Coconut Oil.
16:34Once the oil is hot, let's add some Fenugreek Seeds.
16:40Add some Mustard Seeds to this now.
16:43We'll add some Dry Red Chillies.
16:48Few Curry Leaves.
16:55And now let's add this temper to the mango curry.

17:27This goes very well with a nice parboiled rice.
