Learn how to make Crispy Broccoli at home with our Chef Varun

Ingredients:
2 whole Broccoli (cut into florets)
Cold Water
¼ cup Cornstarch
¼ cup Refined Flour
Salt (as per taste)
Black Pepper Powder (as per taste)
Ice-Cold Water (as required)
Oil (for frying)
5-6 Green Chillies (sliced)
2 tbsp Oil
1 tbsp Ginger & Green Chilli (crushed)
1 tbsp Light Soy Sauce
Spring Onion Greens (for garnish)

00:00Hello, you lovely people, this is me the Bombay Chef Varun Inamdar.
00:02And welcome to Rajshri Food.
00:04Today's produce is Broccoli.
00:06What I'm going to show you is a very quick, simple, easy,
00:09But trust me, a stunning warming recipe called Crispy Broccoli.
00:14Let's begin.
00:16Let's begin with cutting our Broccoli.
00:19First things first, the stalk goes off.
00:22And then we cut these into florets.
00:25Now, there are two ways you can cut the florets.
00:27One is you can leave the entire stem like so.
00:30Otherwise, you cut it into little florets.
00:33You can keep the floret in its entirety or cut it like so.
00:37And then cut it into a half.
00:39The cut is really a personal call and a personal choice.
00:42I like it this size.
00:43Let's cut these similarly.
00:45The next step is to keep this in cold water.
00:49To ensure that there are no guests peeping out of the Broccoli.
00:53These little pieces of stalk can of course make a wonderful vegetable stalk.
00:58Or you can also cut these into little strips, stir fry these,
01:01Or make this into a little subzi.
01:03For now, let's concentrate on Crispy Broccoli.
01:08Well, this is done and ready.
01:10Let's dip this in cold water.
01:12Well, you can also use salted water if you please.
01:15And that way it really takes care of all the unwarranted worms and pests.
01:21Dung this in, keep it for like 5-7 minutes.
01:24And then we move on to the recipe.
01:26Let's keep this aside and move on to the batter.
01:29Cornstarch, to ensure that the Broccoli becomes absolutely crisp with a bite.
01:35And to ensure that the cornstarch clings onto the Broccoli.
01:38I'm going to add in Refined Flour.
01:40Do not overdo this, otherwise the batter would become soggy and sticky.
01:44A touch of Salt.
01:46And a touch of Pepper.
01:49Let's add in Iced Cold Water.
01:51And whisk this to form a batter of coating consistency and also lump free.
01:56Remember that.
01:58Our batter is done and ready.
01:59Let's move on to the deep frying for which of course, we need Oil in a Kadhai.
02:05The next step is to take these florets on a tissue paper or a kitchen towel.
02:11Dab these, ensure they become nice and dry.
02:14Dip this in the batter, either in its entirety or just like 3-4ths.
02:20Dab the excess and transfer this in hot oil.
02:26Ensure that the flame is whacked on a full.
02:29To ensure that these become nice and crisp and do not get overcooked.
02:33Ensure that there's a lot of space for the Broccoli to fry individually.
02:38Without clinging onto each other.
02:40Move these around after 30-40 seconds and not immediately.
02:44Once you see that they just kind of begin to turn golden brown in colour.
02:49We pull these out.
02:54Let's pick these and transfer these on an absorbent tissue paper.
03:05Broccoli is crisp, fried and ready.
03:07Let's move on to making the spice mix.
03:10For which I'm going to take Chillies.
03:12Cut these into thick slices or thick strips like so.
03:17You can take 6-7 or maybe even more, choice is completely yours.
03:22Let's collect these in a bowl again.
03:25And we're ready to move on.
03:27Also, what I like to collect are the seeds because that's where the real flavour is.
03:32Let's begin with regular Vegetable Oil in a wok.
03:36A tablespoon full of crushed Ginger with Green Chillies again.
03:40Sliced Green Chillies.
03:42And stir-fry this on high flame.
03:44Once the raw flavour goes away, I'm going to add in the Broccoli.
03:50A quick splash of light Soya Sauce.
03:52Not too much, you do not want the Broccoli to turn soggy.
03:55And toss this well.
03:58With this, our crispy Broccoli is done and ready.
04:01And with this, off goes the flame.
04:06And finally, a generous sprinkling of Spring Greens.
04:10Make this for family, make this for friends.
