01:03My name is Elaine O'Hara and this is my second O'Papi. We currently have one in
01:12Llama Valley and we are opening now today in the big city, Derry. So I'm
01:17nervous, I'm excited, but there's plenty of buzz about it in the town, so I
01:22shouldn't have anything to be nervous about.
01:24Can you tell me about O'Papi?
01:27So O'Papi started, the idea came to us a couple of years ago.
01:32It's like Mexican food at the minute. It's such a big thing, especially with young people
01:36and burritos, tacos. So we decided that Llama Valley would be a good kind of
01:45place for it, something different to the town. And then as the business has grown and we've really
01:52put ourselves out there a lot, we decided to become a wee bit more central and with a
01:58lot more people about. So this is the next big venture.
02:04What kind of emotions do you have about opening in Derry?

02:08What kind of emotions do you have opening here in Derry?
02:11Well I'm nervous because it is such a very small fish in a very big pond, so I'm definitely nervous.
02:16But if something doesn't make you nervous, then it wouldn't be worth it.
02:20So the only thing that makes me nervous is just being welcomed into the town like I am from the town myself.
