00:09we use the fine zester, not the big rough one,
00:13not the one for slicing, and not the other one for grating.

00:20easier to lift off from the plate than it is the board.
00:23And the most important thing about zesting a lemon
00:26is nice, long strokes, but twisting the lemon round.
00:31Every time we go down, we twist.
00:35Same with the orange, and same with the lime.
