ingredients:

Gram Flour - ¾ cup
Cumin Seeds - 1 tsp
Carom Seeds - ½ tsp
Turmeric Powder - ½ tsp
Red Chilli Powder - 1tsp
Coriander Seeds Powder - 1tsp
Salt (as per taste)
Warm Ghee - 3tbsp
Water (as required)
Oil - 3 tbsp
Cumin Seeds - 1tsp
Green Chilli (chopped) - 2
Onion (chopped) - 3
Ginger-Garlic Paste - 1tbsp
Kashmiri Red Chilli Powder - 1tbsp
Turmeric Powder - ¼tsp
Coriander Seeds Powder - 1tbsp
Salt (as per taste)
Curd (whisked) - ½cup
Coriander Leaves (chopped) - 1tbsp

00:00I am Chef Nikki, today I am going to tell you how to make Rajasthani Gatte ki Sabzi.
00:04Let's start.
00:08For Gatte ki Sabzi, first of all, let's prepare Gatta.
00:11I have taken 3-4th cup Gram Flour.
00:13We will take this in a bowl.
00:15Now, we will add 1 tsp Cumin Seeds, 1 tsp Carom Seeds, 1-4 tsp Turmeric Powder, 1 tsp Red Chilli Powder, 1 tsp Coriander Powder, Salt to taste,
00:293 tbsp Warm Ghee.
00:32Now, we will mix all the ingredients very well.
00:37Now, we will add a little water and prepare a soft dough of Gatte.
00:43Here, we just have to keep in mind that the dough of Gatte should neither be too hard nor too soft.
00:50The dough is ready.
00:51You can see how soft it is.
00:55Now, we will make small balls out of the dough.
00:59Now, we will take one ball and roll it like this.
01:09Here, we have to keep in mind that while making Gatta, there should not be any cracks in the Gatte.
01:16Here, I have boiled 2 cups of water.
01:19Now, we will cook these Gattas in boiling water for 7-8 minutes.
01:23While cooking the Gattas, we have to keep in mind that we have to cook them on a high flame.
01:31It has been 8 minutes.
01:32You can see that there are nice bubbles on top of the Gattas.
01:36This means that the Gattas are ready.
01:39Now, we will turn off the gas flame and set the Gattas aside.
01:43The Gattas have cooled down. Now, we will cut them.
01:49Now, we will put them back in the water.
01:52Now, we will make the sabzi.
01:54We will take 3 tbsp of oil in a pan.
01:57Now, we will add 1 tsp of cumin seeds.
01:59We will also add 1 finely chopped green chilli.
02:02We will sauté both these ingredients well.
02:07We will also add 1 finely chopped onion.
02:12We will sauté the onion till it turns golden brown.
02:17The onion has been sautéed well. Now, we will add the spices to it.
02:21First, we will add 1 tbsp of ginger-garlic paste.
02:25Now, we will add 1 tbsp of Kashmiri red chilli powder.
02:29Add 1 fourth tsp of turmeric powder.
02:31Add 1 tbsp of coriander powder.
02:33Add salt as per taste.
02:35Now, we will sauté the spices well with the onion.
02:41The spices have been sautéed well. Now, we will slow down the gas flame.
02:45Now, we will add 1 cup of whisked curd.
02:51You can see that the oil has separated from the curd.
02:55It means that the gravy has been cooked well.
02:58Now, we will add the jackfruits with water.
03:03We will mix the jackfruits well with the spices.
03:06We will cover it and let it cook on a low flame for 2 minutes.
03:13The sabzi is ready.
03:15Now, we will add 2 tbsp of ghee to it.
03:18Now, we will add some coriander to it.
03:22Our Gatte ki Sabzi is ready.
