00:00If you have just a few minutes to spare today,
00:14That's all you'll need to make this Cucumber Slush.
00:17It's not too sweet like what you'd get from a vending machine.
00:20And there's no artificial colour.
00:23The colour comes just from the colour of the cucumbers.
00:26You'll need about 300 gms of cucumber.
00:29Now in India, we find these pale skinned cucumbers very easily.
00:33So I'm going to leave the skin on.
00:34If you do end up finding a darker skinned cucumber,
00:38It's not really a problem.
00:39All you have to do is just peel it partially in alternate stripes.
00:44Otherwise, you will end up with a very bitter tasting cucumber slush.
00:48And that's not a good thing.
00:49This is just my kind of easy cooking slash drink making.
00:54Because you don't need to cut the cucumber perfectly.
00:59Just get the ends off and just roughly chop it.
01:03Because we're going to blend it in a food processor.
01:05I'm using a food processor,
01:07But if you have a really powerful blender,
01:10You can just use that.
01:11That's perfectly fine too.
01:14We need the juice of just one lemon.
01:18I'm going to keep that ready.
01:20I've got my food processor ready with the sharpest blade.
01:25The cucumbers are the first to go in to the food processor.
01:331 third cup or about 90 grams of Honey.
01:37I love using honey as a sweetener instead of sugar.
01:41I'm not sure if you can use maple syrup here,
01:43But if you want to experiment and try that,
01:45Tell me how it turns out.
01:48I'm just going to add about a quarter teaspoon of flaky sea salt.
01:52If you don't have sea salt, you can just go with regular table salt.
01:56I'm just being a little fancy today.
02:00The juice of one lemon, freshly squeezed.
02:05Half a cup of chilled water.
02:08I'm being a little particular about measurements,
02:10Because you don't want a slush that's either too icy or too thick.
02:13You want the consistency to be just right.
02:162 cups of Ice.
02:18This is the last thing to add.
02:20Otherwise, it'll just keep melting into everything else,
02:23That we've put in the food processor.
02:26Then it's just a quick blend.
02:36I'm blending this till the ice is completely crushed,
02:38And there are no bits of honey floating around in the food processor.
02:46Now, you can just give it a quick taste.
02:49Just to see if you want to add any more lemon juice.
02:55I think it's turned out really well.
02:56I'm pouring the cucumber slush into this jug,
02:59And there's just one little thing left to do.
03:02A frothy texture.
03:04I'm going to stir in some Mint leaves.
03:07This is the only thing in the recipe that I don't have precise measurements for.
03:10Just go for a few leaves, not too much.
03:13And just stir it in.
03:19A little bit more.
03:37This cucumber slush is the perfect drink for a hot summer day.
03:41And the best thing is that you can make it,
03:43And store it in the refrigerator for a couple of hours.
03:46You can serve it as it is, if you're giving it to children.
03:49But if you have a party, you can add some Gin, Vodka,
03:53Or even some White Rum to it.

04:09Today, I'm going to make something that's a bit of a summer cooler.
04:12As the summers are coming into India right now,
04:15It's getting very, very hot.
04:17So rather than drinking just, you know, a glass of fizzy pop,
04:20Or some plain juice,
04:23I'm going to make something that's called,
04:24Aam Jal Jeera.
04:26Aam is Mango, Jal means water,
04:29And Jeera, as most of you might know by now, is Cumin.
04:32Now, for this recipe, I'm using Raw Mangoes.
04:36Keep a pressure cooker handy, because you're going to need it.
04:39First of all, let me peel my other Mango.
04:41Keep it tight to the skin as you can.
04:44And this one is slightly soft,
04:47Which is just what I want.
04:51Obviously, discard the little baby seed.
04:55Pop that in there.
04:58Just rough chop.
04:59Right, pop those in.
05:04Into this, I'm going to add a bit of water, about a cup.
05:08Put my lid on.
05:09And I'm going to pop it,
05:12Onto this side.
05:13And that's only going to need one whistle.
05:16So while my Mangoes are cooking away,
05:18I'm going to heat up a clean pan,
05:20And dry roast some Cumin Seeds.
05:22Hob on.
05:23Let that get hot.
05:25About a teaspoon of Cumin Seeds.
05:28Watch them, so they don't burn.
05:31So they should go a nice,
05:33Brown colour.
05:35A slightly brownish colour.
05:37A brown colour.
05:39A slightly darker colour than they normally are.
05:42And you can smell,
05:44The lovely earthy fragrance of the Cumin.
05:48This should take about,
05:50Two minutes.
05:51So my Cumin Seeds have roasted nicely.
05:54And I'm going to pop them into my Water and Pestle.
05:57Give them a little pounding.
06:01Just needs to be roughly pound.
06:08So my Cumin is nicely pounded.
06:10So let me check my Mangoes.
06:15Lovely!
06:16That's exactly what you want.
06:18If you don't have a pressure cooker,
06:21Which I'd be very disappointed if you haven't invested in one already.
06:25You can always cook the Mangoes in a pan.
06:28Cook them until they're really soft.
06:30So I'm going to pour the Mango with the water,
06:33Because that's got flavour.
06:35Straight into my jug.
06:36And be careful as it's hot.
06:39Pop it all in.
06:42Put a few cubes of Ice in there.
06:46My lovely fragrant Cumin.
06:49Just a little.
06:51Maybe like half a teaspoon or so.
06:53Some Sugar.
06:54Add Sugar according to your own personal taste.
06:57I'm going to put in about a teaspoon.
06:59Now here's a very interesting ingredient.
07:01This is called Black Salt.
07:03It's quite strong in flavour and smell.
07:07But added to anything savoury, it just transforms the dish.
07:11So I'm going to add about half a teaspoon.
07:15And some Mint Leaves.
07:17Pop those in.
07:19Now a little bit more water.
07:21Maybe just half.
07:26Give it a little stir.
07:30And now we just blitz.
07:34There you have it.
07:36Let's give it a quick taste.
07:39Check for seasoning.
07:46It's tart, slightly sweet and that flavour of that Black Salt is mmm delicious.
07:53That's a great drink.
07:56Lovely.
07:58Add a bit of Ice to that.
08:00And that lovely roasted Cumin.
08:03A little sprig of Mint.
08:17I'm going to make a Minty Cold Coffee.
08:19So I have this tall glass of Minty Cold Coffee for me.
08:23Now let's go make a Minty Cold Coffee.
08:25So I'm going to make a Minty Cold Coffee.
08:27So I have this tall glass of Minty Cold Coffee for me.
08:30And I'm going to make one for you.
08:32Firstly, take 250 ml of water in a saucepan.
08:37In it, we'll put a handful of Mint Leaves.
08:43We're doing this so that we get a nice minty flavour.
08:50Now while our Mint Water is boiling, let's make the Cold Coffee mixture.
08:55I've taken a big tall glass.
08:57I'll be adding 50 ml of Cold Water in it.
09:03And around 4 tsp of Instant Coffee Powder.
09:12Just give it a stir.
09:18Our Cold Coffee mixture is ready, let's check on the Mint Water.
09:22What a lovely aroma!
09:23So the water is perfectly boiled and ready to be poured into our glass.
09:27Let's strain it into the glass.
09:33Next, we'll add in Sugar.
09:35I've taken 4 tbsp of Sugar.
09:37But depending on your taste, you can either reduce it or increase it.
09:43Give it a quick stir.

09:53Once the Sugar is dissolved, we'll add in Milk.
09:56I've taken 100 ml of Milk which has been boiled and then cooled down to room temperature.

10:08Now this will go into the refrigerator for chilling.
10:23Our Minty Cold Coffee is nice and chilled.
10:25Let's add in some Ice Cubes in it and garnish with Mint Leaves.
10:38Our Minty Cold Coffee is ready to drink.
10:40Do try this twist in your normal Cold Coffee.
10:54Today, I'm going to make something traditionally Punjabi.
10:57Associated with all us Punjabis and Sardars around the world.

11:08Right, here I have some Yogurt.
11:10Plain Yogurt.
11:11Pop that into your blender.
11:14Some Sugar.
11:18A pinch of Salt.
11:20Maybe a pinch more.
11:21And some Ice.
11:23A little bit of Ice.
11:24Just to keep it cool.
11:26And a little bit of Butter.
11:28And a pinch of Salt.
11:30And a pinch of Butter.
11:32And a little bit of Water.
11:34But you can add a little bit more later.
11:37Give it a blitz.
11:48Now, I'll just taste to make sure it's perfectly fine.

13:00So this is a really messy job.
13:02And my Mango cutting skills aren't great.
13:05I'm going to do my best.
13:07Chop this bad boy in here.
13:10So, I pop my Mangoes in my blender.
13:13You can use any Mangoes you can get hold of.
13:15The most important thing is they got to be juicy and ripe.
13:19Now, for my Yoghurt.
13:21Plain Yoghurt.
13:23Pour that in.
13:24And on my face.
13:27I'm going to add some Sugar.
13:28Not a lot because my Mangoes are very sweet.
13:31Just a bit.
13:32I'll always add more later.
13:34So here I've got some Saffron Strands.
13:36Which I've been soaking in hot water for about 5 minutes.
13:39Just so they can release their lovely golden colour.
13:42Pour that in.
13:43This will give a nice little flavour.
13:45And a nice little colour.
13:47Now, I'm going to add some Sugar.
13:49Not a lot because my Mangoes are very sweet.
13:52Just a bit.
13:53And a nice little colour.
13:54And a pinch of Cardamom Powder.
13:57And this really brings out the flavour of the Mango.
14:01And the Saffron.
14:02I'm going to add some.
14:04Have it as thin or as thick as you like.

14:22There, look at that lovely yellow sunshine from the Mango.
14:28I'm going to sprinkle that with just a little bit more of my Cardamom Powder.
14:33And just a couple of Saffron Strands.
14:35Just to remind you that there is some Saffron in there.
14:37So there you go guys, my delicious Queso Mango Luffy.
