00:07with that right now but maybe I should start calling it that but um y'all know
00:11I love a good salad y'all know I love a good chicken salad because I've already
00:15made a chicken salad for you so I am back with another chicken salad recipe
00:21don't go away if you don't eat chicken I've got options for you you can make it
00:25with tuna instead of chicken and if you're vegan you can make it with tofu
00:31so follow the instructions with whatever your favorite source of protein is and I
00:37promise it's a quick healthy meal I like to do this on a Sunday night when I
00:44don't really feel like cooking and I've already meal prepped and I need like one
00:48more thing the meal prep for the week because like I said it's so quick and
00:53easy and you can keep it for a few days you can bring it to work it's easy maybe
00:59don't do the tuna one for work maybe stick to chicken but you know you don't
01:03care about your co-workers whatever so I usually get like a whole chicken and I
01:11either do it myself or I buy a pre-made rotisserie chicken from my Whole Foods
01:16ATV or whatever but today when I went to go do my instacart delivery they left out my chicken
01:23so I had to order chicken from somewhere else but you know what Chick
01:28House H-O-U-Z is one of my favorite places to get chicken in Houston it is
01:36so yummy I'm almost mad that I have to put this in a chicken salad because they
01:42season it amazingly but it really doesn't need anything else like they
01:46have all these amazing sauces that they give you with your chicken there's also
01:50a green one but I don't even use the sauces because their chicken isn't that
01:54good and their plantains I love their plantains I love their rice if you are
02:01in Houston and you haven't tried them you are missing out and it's the perfect
02:05healthy meal when you don't feel like cooking my hands are clean there's
02:10honestly no pretty way of getting into a chicken I know they sell these things to
02:17like carve it or whatever but I've never used any of those and I don't know how
02:24well they work I usually go in there with my hands I'm not even gonna lie I
02:29think it's the easiest way to do it I do take the skin off and then I just pick
02:37the chicken apart and then I just like put it in like little pieces even
02:42smaller than that and I just that's how I do it so if that grosses you out I'm
02:49sorry but my hands are clean wear gloves if you want to I don't know I don't it's
02:53just for me my family or my friends and me so they know my hands are clean they
02:57don't care you know and if you're grossed out like that then you probably
03:03shouldn't be eating or dining out anywhere because they're gonna do that
03:06just so you know but yeah so you do that this is honestly what takes the
03:15longest so it's nice that it's already cut up for me because usually I have
03:20like a whole chicken and it's not cut up but when I ordered they give you the
03:25option of cutting it into four or eight pieces when you get a whole chicken from
03:30them which I think is lovely you could do a whole chicken you could do a half
03:34chicken you can do it by the pieces and yeah it's like an advertisement for them
03:41right now that they're so good yeah so back to the chicken we are just prepping
03:47all this chicken right now so my chicken is good to go I do it and like not tiny
04:00tiny pieces it's just kind of this you do it however you like it and then the
04:05next step is adding some red onions I do a pretty good amount of onions because
04:13I think it gives it a good flavor so I like to mix every ingredient as I put it
04:21in to make sure that I have enough so that's good on the onions and then I'm
04:29gonna do my avocado and I usually have my little avocado slicer gadget but it
04:37is at the house not at the apartment so I'm gonna have to do it the old-fashioned
04:42way and that is why I sometimes like to add a little bit of mayo if I feel like
05:10my avocado is not as ripe as I want it so that is when I usually stab it
05:26am I allowed to say that on YouTube am I gonna get in trouble for saying I stabbed an avocado?
05:40So I do like them a little riper but I will say that for today's video I used
06:04Instacart so I did not get to pick my avocado but it's still gonna taste good
06:10and I'll be good with once it's in there with the other ingredients I
06:13promise. I usually prefer mine a little bit more ripe. So you take your mashed avocado, add chicken, mix it in very well. I did about one and a half
06:34avocados. I'm going to see if I need the other half which I think this is going to be good enough. So my next step is your hot sauce. As little or as much as you like. It's a preference. I put a pretty good amount of hot sauce in it.
07:02I don't know that I can tell you that's not going to be enough but it might be. I like a lot of hot sauce. That's looking beautiful. So you can be done right here just add a little bit of salt and pepper and you're good.
07:32I don't put a lot of just I put more pepper than salt. I put just a hint of salt because everything here already is pretty salty and you can stop right here if you don't like mayo. But I personally like to add just a little mayo to make it creamier. It's a preference. It's not a necessity. I do about that much and honestly that's going to be good enough for me.
08:02Work! It doesn't work. Again you just mix everything in. And I'm going to tell you it may not look like the prettiest salad because of the guacamole but it tastes amazing.
08:22So another optional ingredient is lemon. I'm not doing it today because we have people that are eating it that don't like lemon. So that's what I'm saying. A lot of these ingredients are optional. So then this is going to be it for me and I'm going to show you two different ways to serve it.
08:42So if I'm having this like as a quick lunch and I'm not that hungry or like a snack I just do the salad by itself. Sometimes I'll add some of these crackers. If I'm doing it more as a full lunch and I'm hungrier I'll make a salad with it. Sometimes I'll make my salad from scratch. Sometimes I don't have time. Today I just ordered a salad and it's a Caesar salad. I usually do a vinaigrette or a Caesar with it.
09:11And I'm going to do a quick Caesar for you today. And again this is like already made so it really does not require that much from me. But it's yummy. It's quick. And I just discovered that Taylor Farms actually makes single size kits. Which I think is so cool to bring to work.
09:36So you could literally make your chicken salad ahead of time and then bring this and then make it at work so it's fresh. So I think that's really cool. I don't know if you've seen these before but just a little suggestion for work.
09:50So this is the fancy Caesar salad kit that actually comes with a Caesar seasoning. And it's got the shaved parmesan. I really like the Taylor Farms salads. I think they're good. And then the little croutons are seasoned. They're delicious.
10:15And then I know it's better to make your own dressing. I'm not going to say it's not. But you know what? Sometimes we're in a hurry. Life happens. You don't have time or you don't have it on hand. These come in handy. And you know what? It's better than ordering fast food. That's how I look at it.
10:35I'm going to do this and then I'll grab my pasta server and show you what it looks like.
10:45Alright. So I put my salad on the side because I don't want to take away from the yummy goodness of the salad.
11:05And then I'll put in a few of these crackers. And ta-da!
11:16So I want to know if you're going to try this recipe, if you make something similar, if you think it should be served with a salad, crackers, or if you like to put yours on a sandwich because you can do that too. I don't have bread to show you that option right now.
