00:04Your palak koftas are going to be very delicious when you try my recipe.
00:09The koftas will be very soft and will melt in your mouth.

00:18So first of all we have to blanch the palak.
00:21Blanching palak is very simple and also very important.
00:25The color of palak remains green and the bitterness of palak also goes away.
00:29So for that we have to boil 3-4 cups of water.
00:33And we have to add half kg of palak to this boiling hot water.
00:37Now we have to cook it for 30-40 seconds.
00:41Which means you have to cook it for less than a minute.
00:44And when you add it to the water it will shrink.
00:48And after 30-40 seconds you have to remove it from the water.
00:52And directly put it in cold water.
00:55So put cold water in a bowl.
00:58So this is very cold water.
01:00If you want you can put ice cubes in it.
01:03And we have to put the palak in this cold water.
01:06And leave it in this water for 2-3 minutes.
01:09With this our palak will remain green in color.
01:13And the bitterness in it will also go away.
01:17After 2-3 minutes we have to remove the palak from the cold water.
01:21And put it in a mixer jar.
01:23And without adding water we have to grind it.
01:26So I will grind it coarsely.
01:28If you want you can also grind it finely.
01:30But if it is coarsely ground it tastes better.

01:35Let's keep it aside and prepare to make koftas.
01:39So to make koftas because I am making veg koftas.
01:42I have taken 200 gms of paneer.
01:44Either crumble it or grate it with a grater.
01:47You will take 3 medium sized potatoes.
01:49And we have to grate them too.
01:51So let's grate it from the thick side of the grater.
01:54You can also mash it with your hands.
01:56Just make sure there are no lumps.
01:58Now we will add 1 cup of finely chopped palak.
02:02So this is approximately 100 gms of palak.

02:06Now we will add some spices.
02:081 tsp of salt.
02:10And along with this we will add 1 tsp of red chili powder.
02:14If you want you can also add ground red chili powder.
02:161 tsp of coriander powder.
02:18And 1 tsp of roasted cumin powder.
02:24Along with this we will add 1 tsp of white cumin.
02:28And grated ginger.
02:32You can also finely chop the ginger.
02:34Now for binding we will add 2-3 tbsp of corn flour.
02:38You can also use arrowroot or maida.
02:42Mix it well with your hands.
02:44And our mixture is ready.
02:46Now apply some oil on your hands and make koftas.
02:50These koftas are very delicious.
02:52You can use palak kofta in normal gravy as well.

03:14Now we will heat the oil on medium flame.
03:16When the oil is hot enough we will drop the koftas in it.
03:20Don't touch the koftas in the beginning.
03:22When the koftas become firm then we will turn the sides and fry them.
03:26And we will fry them until the koftas get a nice golden color.
03:32And they get fried well from all sides.
03:36And in this way our koftas are fried.
03:38We will keep it aside.
03:40And now we will make the gravy.
03:42For gravy I am using mustard oil.
03:44You can use any oil.
03:46We will heat the oil well.
03:48Because this is mustard oil.
03:50So it is important to heat the oil well.
03:52And when the oil is hot enough we will add some whole spices.
03:56In which we will add a piece of cinnamon.
03:58And 2-3 bay leaves.
04:00And 1 tsp of white cumin seeds.
04:04When the cumin seeds crackle we will add 1 large onion.
04:08Which is around 3-4 cups.
04:10We will chop it finely.
04:12And now we will fry the onion until it turns golden.
04:14We will add 1 tsp of grated ginger.
04:18And 2-3 green chilies.
04:20And we will fry it a little.
04:22Until the onion turns golden.
04:28Now we will add 1 tbsp of ginger garlic paste.
04:34And we will add some water.
04:36So that the onion, ginger and garlic won't burn.
04:40We will fry it for 1.5-2 minutes.
04:42Now we will add 1 tsp of salt.
04:461 tsp of red chili powder.
04:48And 1 tsp of kashmiri red chili powder.
04:50Which will give a nice color to our gravy.
04:541 tsp of coriander powder.
04:58And 1 tsp of roasted cumin powder.
05:021 tsp of turmeric powder.
05:06And 1 tbsp of dry fenugreek leaves.
05:08If you don't like dry fenugreek leaves.
05:10You can skip it.
05:12Now we will fry the spices.
05:16We will fry it for 2-3 minutes.
05:18If you need to add water.
05:20Then add some water and fry it.
05:22We will also add 1 tsp of garam masala powder.
05:26Now we will fry the spices.
05:28Until the raw smell goes away.
05:32Now we will add tomato paste.
05:34These are 3 medium sized tomatoes.
05:36Which is around 1.5 cups.
05:38We will also fry the spices with the tomatoes.
05:42We will fry it until the water dries up.

05:50The oil has come to the surface.
05:54Now we will add the spinach.

06:26And cook it for 2-3 minutes on low flame.
