00:07Today we will make an Ayurvedic Chutney recipe, Mint Coconut Chutney.
00:12This coconut chutney can be eaten with any South Indian recipe.
00:17It can be eaten with Dosa, Idli, Vada or even with Uttapam.
00:22So let's make Mint Coconut Chutney.

00:37To make Mint Chutney, we have taken
00:402 cups of mint
00:44water
00:472 green chillies, chopped
00:491 inch ginger, chopped
00:5210-12 curry leaves
00:551 pinch asafoetida
00:571 lemon
00:591 cup grated coconut
01:031 tsp cumin seeds
01:071 tsp mustard seeds
01:091 tbsp ghee
01:11So let's make Mint Chutney.
01:15We have washed the mint leaves 2-3 times.
01:20Now let's start making the chutney.
01:22In a blender jar, add the mint leaves.
01:28Add 1 cup grated coconut
01:34green chillies
01:37ginger
01:39add 1 cup water
01:44and grind to a smooth paste.
01:49We have ground the mint, coconut and other ingredients to a smooth paste.
01:56Take it out in a bowl.
02:00Our chutney is ready.
02:02Now let's make the tempering or seasoning for it.
02:05We have turned on the stove.
02:08Add the ghee to the tempering pan.
02:11We are making an Ayurvedic Mint Chutney.
02:20That's why we have used ghee instead of oil.
02:25The ghee is hot.
02:27Now we will add the mustard seeds
02:29cumin seeds
02:34Turn off the stove.
02:37Add the asafoetida
02:43and curry leaves.
03:01Add the tempering to the chutney.
03:07Mix well.
03:13Add salt to taste.
03:17We are using rock salt.
03:21Squeeze the lemon.
03:37Mix well.
03:47Our Mint Coconut Chutney is ready.
03:50This is an Ayurvedic chutney recipe.
03:52It goes well with any dosa, idli, south Indian snacks, roti or rice.
