00:00 I was lost. I didn't know what to do.
00:01 The plan was to be a seaman,
00:03 but when I had my internship with Black Sheep under Chef Patrick Goh,
00:08 I discovered this whole new world of high-level cooking.
00:12 So, dun nag-end yung seaman plan.
00:16 The rest is history.
00:16 After working for Hapag, for Chef Turdy and Chef Nav,
00:23 the pandemic hit and then everyone was trying to make ends meet.
00:26 So, I found this video online of Teddy's Red Taco.
00:30 That's the whole beer I sent came about.
00:33 The first time I did it, it didn't have all the Mexican ingredients
00:36 because I didn't know about Mexican.
00:37 I had zero clue and then it started with local ingredients.
00:41 The final product was okay and I knew that
00:45 this is something that the Filipino market would be into.
00:48 When we started Los Tacos,
00:53 I realized that everyone was just focused on the meat.
00:57 But then I realized yung Mexican food is more than just what's in the taco.
01:03 More of the whole thing, like tortilla, salsa.
01:07 If you notice, the dishes of Los Tacos is mostly my component of smokiness.
01:13 And it is what we do with Los Tacos.
