00:00 My name's Chris, I'm the director for the new Dolphin pub down here at Old Portsmouth, Dolphin Pub and Kitchen.
00:07 And this is lovely Gina, who will be leading the charge down in front of the house.
00:10 So tell me about this new adventure with the Dolphin pub.
00:17 Yeah, so it came about that the pub was going to be available from the Stonegate Managed House, the tailings last year.
00:23 I've had a personal and professional relationship with the pub for quite a long time now, since I was a young man.
00:28 And when it came available, automatically my head and my heart started to go with different things that I thought this pub could be great for.
00:36 But you can't make a great pub without great people.
00:39 And when the opportunity came up, I automatically looked at Gina and her husband Robin,
00:44 for being able to lead the pub down here with the energy and the drive and the ambition to make it one of the best pubs in Portsmouth.
00:51 It's really culturally important to the city, with the links to the Navy, the links to its heritage and history.
00:57 And we want to bring some of that back with fantastic food, great service.
01:01 Great team as well.
01:02 Great team. And we want people to feel like this is somewhere they just want to come and just relax, come for special occasions.
01:07 Wherever it may be, we want this to become like a second home for them in Portsmouth.
01:11 So tell me what you think the reaction is going to be like.
01:14 In general?
01:16 I think it will be very positive. I think we've put a lot of love, a lot of effort.
01:19 In seven days, yeah.
01:21 A lot of energy. It's a great place.
01:24 It's been a real graft around the clock. We've had a fantastic little team of people here that have managed to get this place up to the standard that it is now.
01:31 We're very proud of it actually.
01:33 We had Stephen Morgan here last night and he was really impressed with it, which is nice for my local MP.
01:38 But the overall feel for when people walk in now I think is something that's going to be, we take a lot of pride in, don't we?
01:45 Is there anything different that you've brought to the pub?
01:49 Fresh food, fresh range of beers, local wines, fine wines, locally sourced spirits.
01:55 Yeah, locally sourced spirits.
01:57 Handcrafted cocktails. Just the food and just the general energy and the welcome that you're going to get in here.
02:01 This is a group of people that have fallen in love with the place and one of the things that I think is important for people to feel is the fact that we've put our arm around this building
02:09 and we've given it a bit of a hug and given it some love and I hope that people feel that when they come in.
