Ingredients :
½ Cup Coriander Leaves
2-3 Green Chilies
1 tsp Cumin Seeds
1 tsp Black Pepper Corns
1 tbsp Garam Masala Powder
10-12 Cashew Nuts
10-12 Almonds
2 tbsp Oil
¼ cup Cashew Nuts
150 gms cottage cheese
10-15 French Beans(Chopped)
1½ Red Carrots (Chopped)
¼ Cup Green Peas
Salt (as per taste)
2 Bay Leaves
¼ Onion Paste
Salt (as per taste)
Water (as required)
½ Fresh Cream

00:02 and welcome to 'Get Curried'.
00:04 While keeping the thought of curries in mind,
00:06 today's curry is a Malai Curry.
00:09 Well Malai means cream.
00:10 Let's make a creamy curry from the heart of India.
00:14 Let's begin.
00:15 While for this creamy Malai Curry,
00:24 I'm going to use a specific set of ingredients that of course,
00:27 are available in all kitchen pantries across the globe.
00:30 However, you can bring in your exotic vegetables and also make this.
00:34 Let me also promise and tell you,
00:35 trust me, it's going to be wonderful.
00:38 First things first is to make a paste of red onions and keep that aside.
00:42 And then immediately move on to making another paste,
00:45 which is going to be the herb and spice paste.
00:47 Beginning with Coriander leaves,
00:49 let's add in some Chillies.
00:51 Green of course.
00:53 I'm going to add in Cumin seeds.
00:56 Black Peppercorn.
00:57 Garam Masala, of course in its powdered form.
01:01 Cashew nuts to bring in that creaminess and richness in the curry.
01:05 And Almonds of course to add to it.
01:07 Let's cover this and grind this into a fine paste.
01:11 Our paste is done and ready, let's move on to the curry.
01:16 Let's begin with Oil in a wok.
01:18 And fry a couple of ingredients, beginning with Cashew nuts.
01:24 Let's fry this till the cashews turn golden brown in colour.
01:27 Let's collect all of this in a deep bowl.
01:31 Time to add in Cottage Cheese.
01:36 Let's move on to some vegetables, beginning with beans.
01:50 Moving on to red carrots and finally some fresh Garden Peas.
01:54 Move this around for a couple of seconds here and there.
01:57 At this stage to bring out the taste and flavour of each vegetable
02:03 and its individuality, I'm going to add in Salt.
02:06 And toss this quickly.
02:07 Let's transfer these vegetables in the bowl again.
02:18 In the same oil, let's begin with Bay Leaves.
02:21 And along with this, paste of Red Onions.
02:24 Let's fry this till the raw flavour of Onion goes away.
02:32 And then we'll add in the paste that we just made a couple of minutes back.
02:39 Let's cook this paste till the oil starts releasing the side of the pan.
02:47 Let's add in the vegetables, Cottage Cheese and Cashew nuts of course
02:51 to this curry mix.
02:53 A touch of Salt, remembering the fact that Salt was already added in the vegetables.
02:57 The water from the blender of course.
03:00 And finally some more water.
03:03 Stir this well and ensure the vegetables are cooked to the doneness of your choice.
03:14 Finally, let's also stir in some Cream.
03:17 And allow this to cook.
03:19 One quick stir and with this, your Veg Malai Curry is done and ready.
