00:11 Hi, I'm Holly from MyRecipes.com.
00:17 Pan-roasted chicken cutlets with maple mustard dill sauce
00:21 from Cooking Light is what's for dinner tonight.
00:24 This simple recipe pairs chicken breast
00:25 with a sweet, tangy dill sauce.
00:28 It's very easy to make, so start by pounding chicken breast
00:32 into thin cutlets between two pieces of plastic wrap.
00:36 You wanna pound each piece of chicken
00:42 to about 1/4 inch thickness.
00:45 This ensures quick and even cooking.
00:48 If you don't have a meat mallet,
00:50 you can use the heel of your hand to pound the chicken
00:53 or try a heavy skillet or rolling pin.
00:57 Once you finish pounding the chicken,
01:00 sprinkle it with salt and pepper to season.
01:05 And then add to a hot skillet coated with cooking spray.
01:12 Cook for about three to four minutes on each side.
01:17 The chicken flattens out as you pound it,
01:19 so you may need to cook in batches.
01:22 While this cooks, I'll go ahead
01:23 and get my other two pieces of chicken ready.
01:26 When the chicken is done, remove it from the pan
01:30 and just set aside to keep warm.
01:33 To make the sauce, add chopped red onion to the hot skillet
01:37 and saute for about a minute.
01:40 When the onions are golden brown,
01:46 add the rest of the ingredients for the sauce.
01:50 So add maple syrup,
01:51 Dijon mustard,
01:57 (sizzling)
01:59 water,
02:02 dill,
02:06 and orange rind.
02:10 And cook for about a minute
02:13 or until the sauce is heated through.
02:16 All right, this is done.
02:22 I just need to get my sides together,
02:24 plate up my chicken, and be ready to eat.
02:27 This simple dish is ready, so all that's left to do
02:30 is spoon over the sweet maple mustard sauce.
02:34 I like to serve the recipe
02:38 with a side of orange-scented couscous.
02:40 It really brings out the orange flavors in the sauce.
02:43 I hope you enjoy this recipe for your dinner tonight.
