00:12 And we're going to find out how to make this cake for a girl or a boy.
00:16 To show us how, we turn to our friend, Liev Hansen, with the Betty Crocker Kitchens.
00:19 Hey, Liev, how are you?
00:21 Hi, Laurie.
00:22 Now, that is a very impressive looking cake.
00:24 Well, thank you.
00:25 But complicated if you don't know what you're doing.
00:27 Well, if you take it step by step, you can do it.
00:29 I believe you.
00:30 Step one, let's go.
00:31 Okay.
00:32 Well, you're going to need four eight-inch square cakes.
00:34 And I've chilled these in the freezer for about 30 minutes so that they're not going
00:37 to have as many crumbs when we cut them.
00:39 Okay.
00:40 Now, to make your tiers of your castle more level, I recommend cutting off the domes on
00:44 your cake.
00:45 So I'm going to use a serrated knife and go ahead and do that.
00:50 Then I'm going to use about one-third of a cup and scoop it right on top.
00:57 Then I'm going to spread it evenly.
01:02 So now that that's done, I'm going to take the next cake, invert it, and put it right
01:06 on top and try to center it.
01:09 And again, another third of a cup.
01:12 Okay.
01:13 And we're going to do one more layer.
01:15 Nice and tall.
01:17 That's good.
01:18 Okay.
01:19 And you can push it down a little bit to try to make it more level.
01:22 Now this one, we're going to cut into quarters.
01:37 I'm going to put a little dollop of frosting, spread it a little bit, and that'll be the
01:44 glue for starting the next tier of the castle.
01:48 And just repeat that.
01:52 Okay.
01:57 We're just going to use one more layer on top.
01:59 Now we're going to cut this one in quarters again to get about two-inch squares.
02:04 Are we going up even higher?
02:07 We're going to do a third tier.
02:08 And we're just going to do two for that.
02:15 So now we're ready to do a crumb coat.
02:18 What's a crumb coat?
02:19 A crumb coat is basically a thin layer of frosting that we spread over the entire cake,
02:23 and that will seal in some of the crumbs so that your final coat is nice and clean.
02:27 And I actually have one ready to go that we can start doing the final coat on.

02:38 For a little grander presentation, we put it on a pedestal.

02:42 So now we're going to start the final coat.
02:47 How pristine do you have to be with this?
02:48 As close as you can to get a flat finish, the better.
02:51 I just like to get all the icing on first, and then I'll try to flatten it out.
02:57 So now I have this lip of icing, and I'm going to start to slice it off, running my spatula

03:02 Don't start on your cake.
03:04 You want to start from outside and slice it in and over.
03:11 So now's the fun part.
03:12 We get to start decorating.
03:13 Oh, great.
03:14 I mean, it looks good enough already, but, okay, let's do it.
03:16 I have a plate of sanding sugar here.
03:17 This is pink sanding sugar, and what I'm going to do is I'm going to take these ice cream
03:22 cones, ice them in the pink frosting, and you're going to roll it in the sanding sugar
03:27 to get a nice glistening effect.
03:30 Sanding sugar you can buy at the grocery store?
03:32 You can.
03:33 Okay.
03:34 Okay.
03:35 So I'm going to put it here, and you can just put your fingers in and roll it around.

03:42 And I'll start the next one.
03:43 You're going to need five of these.

03:47 So now we're ready to put them on the castle.

03:50 Well, basically, I would put your fingers in here and then hold at the top and just
03:55 balance it very gently and place it on, and just sort of push it in a little bit to the
04:00 icing to make sure it adheres.

04:03 And one for the top.
04:06 Beautiful.

04:08 So now we're going to add some accents and candy.
04:11 Oh, good.
04:12 So we have some sugar cubes, some little stars, and some gum balls, and some little wafer
04:19 cookies.
04:20 Okay.
04:21 So the sugar cubes, you can just place them.
04:26 We're going to put these little stars up here, and we'll use our frosting as the glue.
04:29 Okay.
04:30 Just dip it in a little bit.
04:33 And then maybe some of these gum balls.
04:36 Hmm.
04:37 And one over there.
04:40 Beautiful.
04:42 So now we're going to create the doors and the windows.
04:44 I'm going to use these little wafer cookies.
04:46 I'm going to use two for the door, and then I've cut some a little shorter to make for
04:53 the windows.
04:54 Oh, cute.
04:55 So I'm going to pipe on some accents.
04:58 And there you have it.

05:24 You can just frost it with chocolate and maybe change the color palette.

05:30 And you can change the wafer cookies to chocolate or vanilla.
