00:27 In this episode of Everyday Special you are going to see an interesting recipe of Rajasthani classic dessert with a big twist.
00:34 This recipe is requested by the FoodOnTV fan.
00:38 She likes Malpua very much so she requested me to cook something special for her.
00:44 And I have given a big twist to the classic dessert from the land of dessert, Rajasthan.
00:50 So let's start cooking a very simple, easy and delicious Coconut Malpua.
00:57 For this you will need 200 grams of Maida or Plain Flour,
01:01 400 grams Coconut Milk,
01:03 300 grams Sugar,
01:06 25 grams Grated Coconut,
01:08 2 tablespoons Ghee,
01:10 1/2 teaspoon Soda by Cup,
01:13 50 grams Pistachios or Pista.
01:17 First of all put the 200 grams of Maida or Plain Flour into the big mixing bowl.
01:24 Add 1/2 teaspoon of Soda by Cup or baking powder whatever you have.
01:33 Now add around 100 grams of Coconut Milk and start whisking it.
01:44 Whisk it well.
02:12 Again add 100 grams of Coconut Milk.
02:15 You have to repeat this process until you finish the 400 grams of Coconut Milk.
02:37 If you don't have Coconut Milk then you can also add Cream or Milk whatever you have.
02:42 But I think Coconut Milk is very good for this recipe because it's not just healthy but it will give you an unique flavor as compared to the Milk or Cream.
03:01 We have to make thin and consistent batter so we can make the beautiful looking Maltose.
03:07 Add the Maltose.
03:09 Whisk it well.
03:12 Add the Cream.
03:14 Whisk it well.
03:17 Add the Cream.
03:27 Whisk it well.
03:30 Add the Maltose.
03:33 Whisk it well.
03:37 Add the Cream.
03:39 Now you can see it looks very much like a batter.
03:52 Add the Cream.
04:17 Now cover and keep it aside. Meanwhile we have to make Sugar Syrup or Chasni.
04:24 Now in a sauce pan add 300 grams of Sugar and add around half glass of Water.
04:36 I will give you a best trick to make the perfect Chasni or Sugar Syrup for the Malt Poha.
04:44 After 2 minutes you will see the Chasni started bubbling.
04:52 After 4 minutes it is almost ready.
05:10 Now we have to keep this on another stove so it can be hot while we are making Malt Poha.
05:17 Now it's the time to tell you the secret of making best Sugar Syrup.
05:23 In this add 1 tablespoon of Water after every 2 minutes so it can be consistent.
05:39 Now put the grated Coconut into the big plate.
05:43 Now you have to keep the Sugar Syrup hot at the very low flame on another stove.
05:54 Don't worry about the Sugar Syrup you can handle it very easily.
06:00 If you see that your Sugar Syrup started crystallizing again then add 1 tablespoon of Water and keep it on a low flame.
06:09 Now it is ready so we can make the Malt Poha.
06:25 Now heat the griddle or Tawa. On this add few drops of Ghee.
06:30 Now it is hot enough so take the batter and put it into the center of griddle.
06:46 Now take a spoon and dip it into the water so batter don't stick to the spoon and you can easily serve it.
07:05 Now it is looking good.
07:32 Put the few drops of Ghee around Malt Poha.
07:36 It will automatically separate from the Tawa.
07:41 Few drops of Ghee on the Malt Poha.
07:53 Now it is the time to turn it.
08:02 Look at this it looks absolutely delicious.
08:07 Now apply little bit of Ghee on it so it can be cooked perfectly.
08:20 You have to cook it around 2 minutes on each side.
08:35 If you don't have Ghee then you can also use Melted Butter.
09:04 But according to me Ghee is the best option for it.
09:09 Now put it into the Chasni.
09:16 It will be crispy and sweet as compared to the other that we will make later.
09:33 Take this out and put it onto the grated coconut.
09:37 It will give you an interesting flavor as compared to the regular Malt Poha.
09:42 Put some Pistachios on it.
09:59 Now again heat the griddle and put the batter into the center.
10:03 Now with the weighted spoon, make it nice shape.
10:25 Actually here we are making two types of Malt Pohas.
10:29 One with thick layer of sugar on it and that is crispy.
10:35 Another with thin layer of sugar on it and that will be the soft and less sweet as compared to the first one.
10:43 Now we will make the first one.
10:45 Heat the pan and add some oil.
10:47 Add the batter and fry it.
10:50 Now put it into the griddle and fry it.
10:59 Now put the second one.
11:02 Now put the third one.
11:05 Now put the fourth one.
11:08 Now put the fifth one.
11:12 Now put the sixth one.
11:15 I have added one tablespoon of water.
11:31 Put the Malt Pohas in it.
11:38 See it has the thin layer of sugar on it as compared to the first one.
11:43 Sprinkle some Pistachios on it so it can be stick to it and put it onto the grated coconut.
11:53 So this is the coconut Malt Pohas are ready for the serving.
