今回のVEGGIE DISHESは、「胡桃とレーズンのカンパーニュ」をホシノ酵母の生種を使って作ります!発酵カゴに粉を振り過ぎない方が模様が適度につくということや、クープ(パン表面の切り込み)を簡単に開かせる方法など、パンづくりのTIPSもありますので、是非最後まで見てください!\r

▼材料\r
・生種 30g\r
・強力粉 250g\r
・全粒強力粉 50g\r
・水 160g\r
・きび砂糖 15g\r
・塩 3g\r
・胡桃 50g\r
・レーズン 50g\r
\r
▼つくり方\r
《1》全ての材料を混ぜ合わせてよく捏ねて、2倍に膨らむまで一次発酵させる。\r
《2》発酵かごに粉を篩い、かごに生地を入れて二次発酵させる。\r
《3》250℃のオーブンでボウルを被せて10分焼く。\r
《4》ボウルを取り、230℃で20分焼く。\r

This weeks video is Raisin walnut campagne. \r

【INGREDIENTS】\r
30g Namadane \r
250g bread flour\r
50g whole wheat bread flour\r
160g water\r
15g cane sugar\r
3g salt\r
50g walnuts\r
50g raisin\r
\r

【INSTRUCTION】\r
1. mix all the ingredients and knead well. leave at room temperature until the dough doubles in volume.\r
2. dust flour onto a bread proofing basket, then put the dough in it. let it ferment until it doubles in volume.\r
3. cover the dough with bowl and bake at 480℉ / 250℃ for 10 minutes. \r
4. take the bowl out, then bake at 440℉ / 230℃ for another 20 minutes.\r
