coconut rice recipe is healthy and flavored white rice recipe mainly cooked with grated fresh coconut and rice. The recipe is very similar to the other popular version of coconut milk rice but is prepared in a more simpler way. It can also be consumed as it is for breakfast and lunch.
Ingredients:
For Making Rice:
1 cup rice
1 3/4 cup water
For Tempering:
3 tsp ghee
1 tsp Mustard Seeds
½ tsp urad dal
1 tsp chana dal
few curry leaves
1 dried red chilies
2 green chilies, slit1-inch ginger, finely chopped
2 tbsp cashews
¾ cup coconut, grated
½ tsp salt
Method:
1. Wash rice gently changing the water several times until the water appears clear.
2. Take 1 cup washed Rice, add 2 cups of water.
3.In a pan, add ghee, cinnamon, cloves and saute it well.
4.Add cinnamon and cloves to the rice. Pressure cook it for 3-4 whistles.
5. Once whistles are done, allow it to cool down for 15 minutes.
6.In a pan heat 1 tsp oil and add 1 tsp mustard, ½ tsp urad dal, 1 tsp chana dal, few curry leaves, 2 dried red chilies.
also, add 2 green chilies, saute it well.
7.now add 10 cashews and roast till the cashews turn golden brown.
8.add in 3 tbsp grated coconut and saute for a minute or till raw smell goes away.
9.Add tempering mixture to the rice and salt to taste, mix it well.
10. Mix gently, making sure do not break the rice finally, serve south Indian style coconut rice with curry.
